Yield 4

Number Of Ingredients 9

1 cup PC Royal Blend Texmati Premium Rice Mix (or otherwise)
1 tsp concentrated chicken stock
2 tbsp chopped fresh parsley
salt and pepper
l/2 red pepper (roasted and peeled - or not) Chopped
3 green onions, sliced
1/3 olive oil
1/4 balsamic vinegar
l/2 cup roasted whole hazelnuts

Steps:

  • In medium size saucepan, combine rice, 1 1/2 cups cold water, concentrated chicken stock, parsley and 1 tsp.l salt. Bring to boil and stir once, reduce heat, cover and simmer for 15 minutes. Let cool. Combine rice with red pepper, green onions, olive oil, vinegar, nuts and salt and pepper to taste. Serve chilled or at room temperature.

Tips:

  • Choose the right rice: Texmati rice is a good choice for this salad because it cooks quickly and has a slightly nutty flavor. If you don't have Texmati rice, you can substitute another type of long-grain white rice.
  • Rinse the rice before cooking: This will help to remove any starch from the rice, which will make it less sticky.
  • Cook the rice according to the package directions: Different brands of rice may have different cooking instructions, so be sure to follow the directions on the package.
  • Let the rice cool before assembling the salad: This will help to prevent the salad from becoming soggy.
  • Use fresh, high-quality ingredients: The fresher the ingredients, the better the salad will taste.
  • Don't overdress the salad: A little bit of dressing goes a long way. If you add too much dressing, the salad will become soggy.

Conclusion:

Texmati rice salad is a delicious and easy-to-make dish that is perfect for summer gatherings. It is also a healthy and nutritious meal that is packed with flavor. With its vibrant colors and refreshing taste, this salad is sure to be a hit at your next potluck or picnic.
