DECADENT CARAMELIZED TUNA PATTY MELTS
My parents owned a fifties-style diner called Chubby's when I was a kid, so a patty melt was my introduction to rye bread. When I was studying for my baking degree, one of my favorite things to make was rye bread. If you don't yet appreciate the amazing flavor of caraway seed, it's one of those things that will sneak up on you and make you fall in love with it sooner or later.

Steps:
- For the Thousand Island dressing: Stir together all the ingredients in a small bowl until well combined. Set aside.
- For the universal tuna salad: Open the tuna cans and, using the back of a spoon, press as much of the liquid out as you can. Whisk together the mayonnaise, lemon juice, olive oil, mustard, salt and pepper in a small bowl. Fold in the tuna and stir until incorporated.
- For the patty melt: Stir together the tuna salad and the sauerkraut in a medium bowl, and divide the mixture into 4 equal portions. Using your hands, form each portion into a ball, and squeeze out any remaining liquid.
- Heat the oil in a medium skillet over medium-high heat. Add the balls of tuna, pressing them into flat patties using a spatula. (It's okay if they run into each other.) Cook until caramelized on the bottom, 4 to 5 minutes. Gently turn the patties over, and cook until the other side is caramelized. Transfer the patties to a plate, and cover with aluminum foil to keep warm.
- Spread 2 slices of the bread with 1/2 teaspoon butter on each side, and put them in the skillet over medium-low heat. Top each bread slice with a Swiss cheese slice, and cook until the cheese melts, about 1 minute. Spread 1 tablespoon of the dressing on each cheese slice. Top each with a warm tuna patty and 1 Swiss cheese slice. Top each sandwich with another slice of bread, and butter the outside of each bread slice with 1/2 teaspoon butter. Cook for 1 minute; turn and cook until the bread is toasted and the cheese is melted, another 1 to 2 minutes. Repeat the process to make 2 more patty melt sandwiches. Serve the sandwiches hot with the remaining dressing.

DINER-STYLE PATTY MELT
Steps:
- Stir together the mayonnaise, mustard, caraway, 1/4 teaspoon of salt and several grinds of black pepper in a small bowl and set aside.
- Heat a 2-burner griddle over medium heat. Melt 1 tablespoon of the butter over the surface of the griddle. Add the onions and peppers and season with 1/4 teaspoon salt. Cook, tossing occasionally, until tender and golden, 8 to 10 minutes. Push to one side of the griddle and Scrape the griddle clean.
- Combine the beef, Worcestershire and 3/4 teaspoon salt in a medium bowl and mix with your hands to combine. Form into 2 oval patties about 1/2 inch thick each, slightly larger than the size of the slices of toast (they will shrink a little as they cook). Season both sides of the patties with the remaining 1/4 teaspoon of salt and a couple cranks of black pepper.
- Melt the remaining tablespoon of butter on the grill over medium to medium-high heat. Add the patties on one side of the griddle and press to flatten with a metal spatula. Cook, flipping once, until browned and almost cooked through, 2 to 3 minutes per side. Meanwhile, lay the Texas toast down on the other side of the griddle. Toast one side, 1 to 2 minutes, then remove to your cutting board.
- To assemble, spread the toasted side of 2 pieces of bread with half of the mayo mixture. Add a slice of Swiss cheese to each, then a burger patty. Top with the onion mixture and the American cheese. Spread the remaining mayo mixture on the toasted sides of the last 2 pieces of Texas Toast and top the sandwiches mayo-side down.
- Set the sandwiches on the griddle over medium low heat. Toast, flipping once, until the cheese is melted and the bread is crisp and toasty, about 3 minutes per side. Cut in half to serve, with ketchup on the side.

- 2. Cook on stove top, medium heat, in a small pan.
- 3. Place spinach on plate, place patty on spinach, sprinkle cheese on top. =) Bon apetit.
Tips:
- For the perfect tuna patty, use a combination of canned tuna, mayonnaise, celery, onion, and seasonings. Mash the ingredients together until well combined, but be careful not to overmix, as this can make the patties tough.
- When grilling the tuna patties, use a well-oiled grill or griddle to prevent them from sticking. Cook the patties over medium heat for about 3-4 minutes per side, or until they are cooked through and slightly browned.
- For the ultimate patty melt, use thick slices of Texas toast and top with a layer of cheese, the cooked tuna patty, and another layer of cheese. Grill the sandwich until the cheese is melted and gooey, and the bread is golden brown.
