TEXAS-STYLE SLOW-COOKED FRIJOLES

Pinto beans are slowly cooked to perfection with smoked bacon, jalapenos, and cilantro. This is an easy recipe I learned from my friend's grandmother in Nuevo Laredo, Mexico. This recipe can be adjusted to taste and is a dietary staple in south Texas. Great for barbecues and potlucks! Make sure the beans are covered by liquid at all times. The longer you cook it, the better it is. Serve with flour tortillas or as a side dish in bowls.

16 ounces water
6 slices bacon, or more to taste
6 jalapeno peppers, seeded and sliced, or more to taste
1 bunch fresh cilantro, chopped
1 clove garlic, chopped, or more to taste
2 (12 fluid ounce) cans light beer, or as needed, divided

Steps:

  • Pour pinto beans into the bottom of a big saucepan or soup pot. Add water, bacon, jalapenos, cilantro, and garlic and bring to a simmer, about 10 minutes. Pour in 1 can light beer when beans are warmed.

Time 8h20m

Yield 8-10 serving(s)

Number Of Ingredients 12

1 teaspoon vegetable oil
1 cup barbecue sauce (I use Bulls Eye)
1/2 cup apple cider vinegar
1/2 cup chicken broth
1/4 cup dark brown sugar
1 tablespoon prepared mustard (I use Grey Poupon)
1 tablespoon Worcestershire sauce
1 tablespoon hot chili powder
1 large onion, chopped
2 large garlic cloves (crushed)
1 1/2 teaspoons dried thyme
1 (4 lb) pork roast

Steps:

  • Set slow cooker to low heat. Add all ingredients except pork roast to slow cooker and stir until well blended. Allow mix to heat for 5-10 minute
  • Add one 4lbs roast to the slow cooker. Baste roast with juices in the crock pot. Cover with lid and allow to cook for 8 hours on low or until pork shreds easily with a fork. If you so choose you can cut cooking time down to approximately 5 hours by cooking on high. I recommend the low setting for best results.
  • Once pork roast will shred easily with a fork remove roast from slow cooker and shred roast using two forks. Return meat to slow cooker and stir meat in to the juices.
  • Pork is now ready to serve.
  • Best served on buttered toasted pub buns, but potato buns or regular hamburger buns will work.

Tips:

  • Use dried beans for the best flavor and texture. If you're using canned beans, be sure to rinse and drain them well before using.
  • Soak the beans overnight before cooking. This will help to reduce the cooking time and make the beans more digestible.
  • Use a slow cooker or a Dutch oven to cook the beans. This will allow the beans to cook slowly and evenly.
  • Add flavor to the beans with a variety of spices and seasonings. Some popular choices include chili powder, cumin, garlic, and onion.
  • Serve the beans with your favorite toppings, such as sour cream, cheese, and salsa.

Conclusion:

Texas-style slow-cooked frijoles are a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. They're also a great source of protein, fiber, and vitamins. Whether you're a fan of traditional Mexican cuisine or just looking for a new and flavorful dish to try, these frijoles are sure to please.
