We really like these green beans at TRH and after a little searching found this recipe. Recipe is courtesy of WTVR, Richmond, VA. When a friend of mine started working there, I asked if this is how they prepare their green beans and she shook her head yes, but said no with a smile. I have included both variations for this recipe; choose the one to your liking. Cook/simmer time is approximate.

2 (16 ounce) cans green beans, drained
2 cups water
1 tablespoon sugar
1/2 teaspoon pepper
4 ounces bacon, diced (raw) or 4 ounces ham (cooked)
4 ounces diced onions

Steps:

  • Using a colander, thoroughly drain green beans. Set aside.
  • Mix water, sugar and pepper until well incorporated. Set aside.
  • Preheat your cooking pan to Medium High heat.
  • Raw Bacon Method.
  • Using a cutting board and a knife, dice the raw bacon into equal size pieces. Place diced bacon into preheated cooking pan. Continually stir bacon with large spoon to keep the bacon from burning.
  • Once bacon is cooked add the onions and cook until they are tender and light brown.
  • Diced, Cooked Ham Method.
  • Using a cutting board and a knife, dice the cooked ham into equal size pieces. Place the diced ham and onions into the preheated cooking pan.
  • Using the large spoon, continue to stir the ham and onions until the ham is lightly brown and the onions are tender.
  • Now that the onions are tender add the liquid mixture and the beans.
  • Using the rubber spatula stir the mixture until incorporated.
  • Bring mixture to a boil and turn heat to simmer. Serve beans as soon as you are ready.

1 lb 20/80 or 15/85 ground beef
1 tsp seasoning salt
3 Tbsp a-1 steak sauce
3 Tbsp worcestershire sauce
1 large egg
1/2 tsp pepper
1 medium onion
4 oz button mushrooms
3 slice monterey jack cheese
salt and pepper
garlic powder

Steps:

  • 1. In bowl mix fresh ground beef with Worcestershire sauce, seasoning salt, A-1 sauce, pepper, and egg. Preheat oven to 400 degrees F
  • 2. When thoroughly mixed, loosely shape into 3 football shaped patties. Sear both sides in medium high preheated stove top skillet. They will quickly brown. When brown, flip over and sear the other side.
  • 3. Take from skillet and place on an aluminum foil covered broiler pan to save clean up. Place in 400 degree oven for 12 minutes for medium well.
  • 4. Clean and Slice button mushrooms and onions and place in olive oil coated skillet or on griddle. Cook onions first, then increase surface heat and add mushrooms. Season with salt, pepper and garlic powder, saute until mushrooms just start to soften. Remove from heat.
  • 5. Cover chopped steaks with onion mushroom mixture and place slice of Monterrey Jack cheese over each one. Return for 1-2 minutes in hot oven. Remove and enjoy!

1/4 cup texas roadhouse rib seasoning
2 1/2 cups water
1/2 cup liquid smoke
2 tablespoons vegetable oil
1/4 cup minced fresh onion
1 1/2 cups water
1/2 cup tomato paste
1/2 cup white vinegar
1/2 cup brown sugar
2 tablespoons honey
1 tablespoon Worcestershire sauce
1 3/4 teaspoons salt
1 teaspoon liquid smoke
1 teaspoon whiskey
1/4 teaspoon coarsely ground fresh black pepper
1/8 teaspoon garlic powder
1/8 teaspoon paprika

Steps:

  • Score the frozen ribs several times on the back of the rack.[3]
  • Allow to thaw overnight.
  • Preheat oven to 275 degrees Fahrenheit. Place a wire rack in a large shallow pan large enough to hold the rack of ribs.
  • Rub 1/8 cup of the Texas Roadhouse rib seasoning over each side of the ribs. Use additional seasoning if needed to cover each side of the ribs.
  • Combine the water and liquid smoke in the large pan. Mix well.

  • While the ribs are cooking, saute the onion in vegetable oil in a saucepan. When the onion is soft, add the remaining ingredients and bring to a boil. Reduce heat to a simmer and simmer for an hour over low heat, until thickened.
  • Preheat a charcoal or gas grill.
  • Grill covered for about four minutes on each side. Brush with BBQ sauce, then flip to allow the sauce to caramelize. Repeat with the other side. Serve.
