1 cup water
1 cup uncooked instant rice
1 pound lean ground beef
2 onions, chopped
1 large green bell pepper, chopped
1 (14.5 ounce) can diced tomatoes
1 (8 ounce) can tomato sauce
2 tablespoons chili powder
1 (8.75 ounce) can whole kernel corn, drained
salt and pepper to taste
3 slices processed American cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 2 quart (8 inch round) casserole dish.
  • In a medium saucepan, bring 1 cup of water to a boil. Stir in instant rice, cover and remove from heat. Let sit for 5 minutes.
  • In a medium skillet over high heat, brown ground beef with onions and green pepper. Stir in diced tomatoes, tomato sauce and chili powder. Simmer for 20 minutes.
  • Stir cooked rice into the beef mixture. Mix in the corn, salt and pepper.
  • Pour the mixture into prepared casserole dish. Cut the American cheese slices in half and place over the top.
  • Bake in preheated oven for 15 to 20 minutes or until cheese is melted and bubbly.

2 tablespoons olive oil
1 cup diced onion
1 cup diced green bell pepper
1 tablespoon minced fresh garlic
1 pound ground beef, 80/20
½ teaspoon dry mustard
2 teaspoons chili powder
2 teaspoons kosher salt
¼ teaspoon freshly ground black pepper
½ cup uncooked long grain white rice
2 tablespoons tomato paste
1 14.5-ounce can diced tomatoes with juice
1 cup water
1 teaspoon Worcestershire sauce
1 cup shredded cheddar cheese, optional and not shown in our photo

Steps:

  • In a skillet that has a tight fitting cover, heat olive oil over medium high.
  • Add onion, peppers, garlic, ground beef, dry mustard, chili powder, salt and pepper. Sauté until ground beef is no longer pink, breaking up beef as you cook.
  • Add rice and cook for two minutes letting rice absorb liquid.
  • Add tomato paste and cook for one minute.
  • Add canned tomatoes with juice, water and Worcestershire sauce. Stir, cover and simmer for 20 minutes covered.
  • After 20 minutes, remove lid and fluff the mixture then serve. If the mixture is too wet, cook for another few minutes with lid off.
  • If you are using the cheese, sprinkle on top for last few minutes of cooking time with lid on.

3 large onions, sliced
1 red or green pepper, minced
3 Tbsp cooking oil
1 lb ground chuck
1 large can tomatoes, squashed or diced tomatoes
3/4 c uncooked rice (can use 2 cups uncooked noodles)
chili powder (to taste) - no more than 1 tsp.
2 tsp salt
1/8 tsp pepper

Steps:

  • 1. Saute onions, green or red pepper in cooking oil until tender. Remove from pan and set aside.
  • 2. Add ground chuck to pan and brown. Important: Drain pan of all fat. (You can see in my last picture where I needed to drain more in this step.)
  • 3. Add rice (or noodles), chili powder, salt and pepper, and set aside onions and pepper to pan with ground chuck.
  • 4. Stir mixture well.
  • 5. Pour mixture into greased baking dish.
  • 6. Cover and bake at 350 degrees for 45 minutes.
  • 7. Remove cover and bake additional 15 minutes.
  • 8. Enjoy!

1 lb lean ground beef
1/2 medium onion, chopped
1 celery stalk, chopped
15 oz can diced tomatoes
1/2 large green bell pepper, chopped (or you can use a jalapeno pepper)
1/2 c uncooked white rice
1 tsp minced garlic
1/2 tsp chili powder (or more, if desired)
1-2 tsp salt
1/2 tsp black pepper
1 1/2 tsp dried parsley

Steps:

  • 1. Preheat oven to 375ºF. Lightly spray a 9x13-inch baking dish with cooking spray; set aside.
  • 2. Sauté the beef, onion and celery in a large skillet over medium heat until no pink remains in the beef and the onions are clear. Place the meat mixture in a colander to let the excess grease drain.
  • 3. Return the meat mixture to the skillet. Add the tomatoes, green pepper, rice, garlic and all remaining ingredients (spices/herbs) to the skillet. Stir well.
