1 lb cheddar cheese, shredded
1 lb monterey jack cheese, shredded
1/2 cup chopped jalapeno
2 eggs
1 (12 ounce) can evaporated milk
1 cup flour

Steps:

  • Mix cheeses and jalapeno and put into a 9x13 greased pan.
  • Mix the egg, milk, and flour and pour on top.
  • Bake at 350 for 35 minutes.
  • You can use more or less jalapeno according to your taste or you can even use green chilis if you prefer.

1 lb cheddar cheese shredded
1 lb monterey jack cheese shredded
1 lb sharp cheddar shredded
12 oz sliced jalapenos drained (i get the tamed ones at walmart)
1 can(s) evaporated milk (12 oz.)
1 c self rising flour
2 eggs

Steps:

  • 1. Combine all shredded cheeses in a large bowl. Place half of the cheeses in a sprayed 13x9 pan. Layer jalapenos over cheese mixture and then top with remaining cheeses. Beat flour, eggs and evaporated milk til smooth. Spread over cheese mixture. Bake for 40-45 minutes. Let cool for about 20 minutes before cutting.
  • 2. For variations I have added minced onion,crumbled bacon or ham.
