While living in the Mid-Hudson Valley of NY I fell in love with this style of hot dog, particularly the sauce. My wife was born there and she loved them as well. When we moved to Texas it was a surprise to find, 'There is no such thing as hot wiener sauce in Texas.' I did a lot of research and found the recipe is a closely guarded secret that I had to crack. After years of experimenting I finally created the same experience we only had back in NY. Serve on your favorite hot dog with brown mustard, diced onion, in a steamed hot dog bun. This sauce will be thin, it is supposed to be, it is not a 'chili dog' recipe. The sauce will thicken as it cools. It freezes well.

½ pound all-beef hot dogs, ground
¼ cup white vinegar
1 tablespoon paprika
1 tablespoon chili powder
1 teaspoon sea salt, or more to taste

½ teaspoon ground cinnamon
¼ teaspoon ground white pepper
¼ teaspoon dried thyme leaves
2 grinds freshly ground black pepper, or more to taste
½ cup cornstarch
¼ cup cold water, or as needed

Steps:

I had tried making a copy of Rudy's sauce on my own, but this recipe tastes exactly the same as the one found at Rudy's on the shore of Lake Ontario just off the Oswego college campus.

2 cups water
1 teaspoon thyme
1 teaspoon celery seed
1/2 teaspoon allspice

1/2 teaspoon ginger
1/2 teaspoon cinnamon

½ (16 ounce) package hot dogs, coarsely chopped
½ cup cornstarch
8 cups water, divided
¼ cup distilled white vinegar
1 tablespoon paprika
1 tablespoon chili powder
1 teaspoon sea salt
1 teaspoon red pepper flakes
½ teaspoon dried oregano
½ teaspoon onion powder
½ teaspoon ground cinnamon
¼ teaspoon white pepper
1 pinch ground black pepper, or to taste

Steps:

  • Grind hot dogs into a chunky paste in a food processor and place into a large saucepan. Mix cornstarch with 1 cup water in a small bowl and set aside. Pour 7 more cups water over the hot dogs. 1 lb hamburger
1 c water
1 large onion, minced
5 oz Worcestershire sauce
1 Tbsp chili powder
5 Tbsp A - 1 steak sauce
2 Tbsp ketchup

  • 1. For the sauce, brown hamburger and onion in a large skillet chopping hamburger up into small pieces as it cooks. Drain off any grease.
  • 2. Add the remaining ingredients and simmer for about 30 minutes uncovered. Stir often because it will stick.

½ pound ground pork
½ pound lean ground beef

1 lbs. 85% lean ground beef

1 cup water
1/4 cup hot sauce (adjust to taste) Franks is our choice
2 Tbsp. Worchershire sauce
2 Tbsp. yellow mustard.

  • Heat oil in skillet over medium high heat until shimmering. Add the beef and onion and cook until beef is no longer pink, about 5 minutes.
