Number Of Ingredients 6

1 small can coconut
1/2 pound candied cherries
1/2 pound candied pineapple
2 1/2 cups pecans
1/2 cup all-purpose flour
1 can sweetened condensed milk

Steps:

  • Mix in order given. Spray miniature muffin pans with non-stick spray. Fill with cake batter. Place pan of water on bottom of oven while baking. Bake at 350deg for 20 minutes (small ones) to 30 minutes (large ones) until golden brown. Let stand for a few minutes before removing from pans. Makes about 48 large cakes or 80 small ones.

This was in my Christmas card from my sister in law Carol McMillan that winters every year in Texas to se her kids. I would like to share this with you now since...

Number Of Ingredients 9

1 c butter
1 c sugar
1 c dried fruit, such as dried cranberries, or cherries. or finely chopped dried apricots, apples or pears
4 large eggs
1 tsp baking powder
1 tsp baking soda
1 tsp lemon juice
1 c brown sugar
1 to 2 qt whiskey

Steps:

  • 1. Before you start, sample the whiskey to check for qyality. Good isn't it? Now go ahead
  • 2. Select a large mixing bowl , neasurimg cups, etc. Check the wiskey again, as it must be just right. To be sure it is of the highest quality, pour one level cup into a glass and drink it as fast as you can. Repeat.....
  • 3. With an electic mixer beat 1 cup of butter in a large fluffy bowl.
  • 4. Add one cup of thugar and beat again.
  • 5. Meanwhile make sure the wiskey is of the finest quality.
  • 6. Cry another tup. Open second quart if netathry.
  • 7. Add 2 large effs, 2 cups fried druit, and beat.
  • 8. If druit gets stuck in beaters, just pry loose with a drewscriver.
  • 9. Sample the wiskey again to check for tonscisiticy.(Carol by the way is a RN).
  • 10. next sift 2 cups of salt, or anything else, it really doesn't matter.
  • 11. Sample the viskey once again.
  • 12. Sift 1/2 pint of lemon juice, fold in chopped brown thugar,or whatever color you can find, and mix well.
  • 13. Grease roven and turn cake pan to 350 degreefs.
  • 14. Now pour the wnole mess in the roven and ake.
  • 15. Check the viskey one last tine and bo to ged.
  • 16. MERRY CHRISTMAS TO EVERYONE!!!!!!
