From July 1999 Bon Apetit - This salad is so good. I like to add grilled chicken to give it some protein and make it a meal. The salad dressing is a winner too! I like to keep a batch on hand to dip veggies in.

Categories     Lettuce Salads

Time 20m

Number Of Ingredients 16

2/3 c fresh cilantro chopped
1/4 c plain yogurt
1/4 c red wine vinegar
1/4 c parmesan cheese, freshly grated
1/4 c shallots, chopped
2 anchovy fillets
2 cloves garlic
1 jalapeno pepper, seeded and chopped
1 Tbsp fresh lemon juice
3/4 c olive oil (or less to taste)
8 c romain lettuce (2 heads), chopped
3 c salad croutons
1 large red bell pepper, diced
2 ears sweet white or yellow corn, kernels removed
1 c oil-packed sun-dried tomatoes, drained and patted dry - thinly sliced
additional freshly grated parmesan cheese

Steps:

  • 1. Puree first 9 ingredients in processor until smooth. Gradually add olive oil and process until blended. Season dressing to taste with salt and pepper.
  • 2. Combine romaine lettuce and next 4 ingredients in a large bowl. Toss with enough dressing to coat. Garnish with additional grated parmesan cheese.

Tips:

  • Use fresh ingredients: The fresher the ingredients, the better your salad will taste. If possible, use organic produce.
  • Make your own dressing: Homemade dressing is always better than store-bought. It's healthier, tastier, and you can control the ingredients.
  • Don't overdress the salad: A little dressing goes a long way. Too much dressing will weigh down the salad and make it soggy.
  • Add some crunch: Croutons, nuts, and seeds add a nice crunch to Caesar salad. You can also add some chopped vegetables, such as celery or cucumbers.
  • Serve the salad immediately: Caesar salad is best when served immediately after it's made. The dressing will wilt the lettuce if it sits for too long.

Conclusion:

Texas Caesar salad is a delicious and easy-to-make salad that's perfect for any occasion. With its creamy dressing, crunchy croutons, and salty Parmesan cheese, it's sure to be a hit with everyone at your table. So next time you're looking for a quick and easy salad recipe, give Texas Caesar salad a try. You won't be disappointed!
