2 packages (8 ounces each) pitted dates, chopped
1/2 pound pecan halves
1/2 pound Brazil nuts
1 jar (10 ounces) red maraschino cherries, well drained
1 jar (10 ounces) green maraschino cherries, well drained
1/2 cup sweetened shredded coconut
1-1/2 cups all-purpose flour
1-1/2 cups sugar
1 teaspoon baking powder
1 teaspoon salt
3 eggs
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 300°. Line four greased and floured 5-3/4x3x2-in. loaf pans with waxed paper and grease the paper; set aside., In a large bowl, combine dates, nuts, cherries and coconut. 1/2 lb pineapple bits (the kind for fruit cake)
1 cup drained maraschino cherry, chopped
1 cup raisins (you can mix the gold and dark raisins if desired)
3/4 cup flour
3/4 cup sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
3 eggs
1 teaspoon vanilla

1 cup white sugar
1 pinch salt
½ teaspoon vanilla extract
4 eggs
1 ½ cups all-purpose flour
2 teaspoons baking powder
1 pound Brazil nuts
1 pound chopped walnuts
1 pound pecan halves
1 pound red candied cherries
1 pound green candied cherries
2 pounds pitted dates

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease three 9x5 inch loaf pans, line them with parchment paper, and grease the paper.
  • Beat eggs, salt and vanilla together until very light and lemon colored. Add sugar, 1 cup of the flour and 2 teaspoons baking powder.
