1 tsp Ground Cumin
1 tsp Ground Coriander
1 tsp Paprika
1/2 tsp Salt (optional; see note)
1/2 tsp Garlic Powder - Make sure you use garlic powder and not garlic salt.
1/2 tsp Dried Oregano

Steps:

  • Salt is always optional in homemade seasoning. Feel free to add it to the blend now or wait and add it, to taste, when you make a recipe later. (Just don't forget it entirely. Salt will bring out the flavors in the recipe you're making and will allow this seasoning blend to really shine.)
  • Combine all ingredients in a bowl. Store in an airtight container for up to 6 months.

3 Tbsp chili powder, i prefer ancho
2 Tbsp dehydrated onions
2 Tbsp ground cumin
1 Tbsp dried oregano
2 tsp hungarian paprika, not smoked
2 tsp garlic powder
1 tsp red pepper flakes
1 tsp black pepper, freshly ground.

Steps:

  • 1. PREP/PREPARE
  • 2. If kept in a cool dry place (the pantry comes to mind), most spices will last up to a year.
  • 3. If you have an old glass spice bottle with a shaker top, that would be an ideal storage container.
  • 4. Gather your ingredients (mise en place).
  • 5. All of the ingredients have a ground consistency, except 3: The dehydrated onions, dried oregano, and the red pepper flakes. So, before mixing all the ingredients together, place those 3 into a spice grinder, or mortar, and grind until they are the same consistency as the other spices.
  • 6. Mix all the ingredients together, and store in a bottle or jar with a tight-fitting lid.
  • 7. PLATE/PRESENT
