Provided by Carol White

Categories     Seafood

Time 15m

Number Of Ingredients 9

1/2 c onions, diced
1/2 c bell beppers ( red, yellow, green) diced
1 1/2 lb medium white shrimp (cleaned & deveined)
1 pkg tex-mex chili mix
1 c tomatoes, diced
2 Tbsp garlic, minced
1 juice of 1 lime
1/4 c fresh parsley, chopped
3 Tbsp olive oil

Steps:

  • 1. Rinse and drain shrimp, then pat dry; sprinkle Tex-Mex chili mix over shrimp and coat very well.
  • 2. Preheat large skillet on medium high, add olive oil, onions, bell peppers, and garlic, saute for about 2 minutes. Then add shrimp, tomatoes, parsley and cook 1 - 2 minutes until shrimp are opaque. (Do not let shrimp over cook.)
  • 3. Then add lime juice. Remove from heat and serve over rice, pasta, or couscous. Add a steam veggie for a balance meal. Enjoy!

Tips:

  • Prepare Ingredients Beforehand: Before starting, make sure all ingredients are cleaned, cut, and measured. This will help streamline the cooking process.
  • Use Fresh Vegetables: Fresh vegetables retain their nutrients and flavors better than frozen or canned options. If possible, opt for fresh squash, cherry tomatoes, and cilantro.
  • Cook Shrimp Properly: Avoid overcooking the shrimp, as it can become tough and rubbery. Cook them for just a few minutes until they turn opaque and pink.
  • Make the Avocado Dressing Ahead: The avocado dressing can be made in advance and refrigerated for up to 3 days. This saves time and allows the flavors to meld.
  • Use a Variety of Quinoa: If you don't have quinoa on hand, feel free to substitute it with another grain of your choice, such as brown rice, farro, or barley.

Conclusion:

This Tex-Mex Shrimp and Squash Grain Bowl with Avocado Dressing is a vibrant and flavorful dish that combines the best of Mexican and Texan cuisine. The succulent shrimp, tender squash, and protein-packed quinoa are complemented by the creamy avocado dressing, creating a satisfying and nutritious meal.
