MEXICAN SHRIMP AND GRITS

1 pound medium fresh shrimp, shells left on
6 cups water
1 teaspoon salt, divided
3/4 cup white grits
3 tablespoons butter
6 ounces pepper jack Velveeta cheese, cubed
1/2 pound chorizo sausage, casings removed
3 tablespoons olive oil, optional
1 1/2 cups chopped Vidalia onion
1 red bell pepper, seeded and chopped into 3/4-inch pieces
1 jalapeno pepper, seeded and minced
3 tablespoons all-purpose flour
2 tablespoons heavy whipping cream
1 teaspoon fresh lime juice
2 green onions, chopped, plus more for garnish
3 tablespoons chopped fresh cilantro leaves
1/8 teaspoon ground black pepper

Steps:

  • Peel the shrimp and set aside, reserving the shrimp shells.
  • In a large saucepan, bring the water to a boil over medium heat. Add the shrimp shells and reduce the heat to medium-low. Cook for 15 to 20 minutes, stirring occasionally. Cool the shrimp stock, and strain. Discard the shells.
  • In a large saucepan, bring 3 1/2 cups shrimp stock and 1/2 teaspoon salt to boil over medium heat. Add the grits, stirring well. Add the butter and stir until melted. Cover, and reduce the heat to low. Cook until thickened, stirring occasionally, about 15 to 20 minutes. Add the Velveeta, and stir until melted. Set aside and keep warm.
  • In a large skillet over medium heat, add the chorizo and cook until browned and crumbly, about 5 minutes. Remove the chorizo, to a plate or bowl, leaving the drippings in the skillet. Add up to 3 tablespoons olive oil, if necessary. Put the skillet over medium heat, and add the onion. Cook for 4 minutes, then add the red pepper and jalapeno, and cook, stirring frequently, for 3 minutes. Sprinkle with the flour, stirring constantly for 3 minutes. Gradually add 2 cups of shrimp stock, stirring to scrape the bottom of the skillet and to prevent lumps. Stir in the cooked chorizo, and increase the heat to medium-high. Bring the mixture to a boil, and cook until slightly thickened. Add the shrimp, and cook until they turn pink, about 2 to 3 minutes. Remove the skillet from the heat, then add the cream and lime juice. Stir in the green onion, cilantro and remaining 1/2 teaspoon salt, and pepper. Transfer the grits to a serving platter and spoon the shrimp mixture over the top. Garnish with green onion and serve.

5 cups low-sodium chicken stock
3/4 cup quick grits
1 1/2 cups grated pepper jack cheese
1 1/2 cups grated sharp Cheddar
1/2 cup mascarpone
4 tablespoons butter
1 tablespoon olive oil
1 1/2 pounds peeled and cleaned jumbo shrimp
1 tablespoon Cajun seasoning
Kosher salt and freshly ground black pepper
6 strips bacon, chopped
1 onion, chopped
1 red bell pepper, chopped
1 jalapeno pepper, chopped
1 tablespoon tomato paste
Hot sauce, as needed
Juice of 1/2 lemon
3 scallions, chopped, for garnish

Steps:

  • Bring 3 cups of the chicken stock to a boil in a saucepan. Slowly stir in the grits. Return to a boil and cook for 3 to 4 minutes. Turn down the heat and stir in the pepper jack, Cheddar and mascarpone. Cook for another 3 to 4 minutes. Stir in 2 tablespoons of the butter and keep warm. Heat the remaining 2 cups stock in a separate saucepan until hot.
  • Meanwhile, heat the oil and remaining 2 tablespoons butter in a large skillet over medium-high heat. Season the shrimp with the Cajun seasoning and some salt and pepper. Add the shrimp to the skillet and cook for 1 to 2 minutes on each side, then remove and set aside. (The shrimp will finish cooking in the sauce.)
  • Add the bacon, onion, red pepper and jalapeno to the skillet and season with salt and pepper. Cook until beginning to brown, about 3 minutes. Add the tomato paste and cook for 1 minute. Stir in the hot stock and add hot sauce to taste. Return the shrimp to the skillet with any juices that have accumulated. Cook until the shrimp are just cooked through, another 2 minutes. Add the lemon juice. Taste and adjust the seasoning.

1 cup quick cooking grits
Salt and freshly ground black pepper
1 tablespoon butter
1/4 cup Parmesan
2 tablespoons butter
1/2 medium onion, chopped
2 cloves garlic, minced
1 green bell pepper, chopped
1/2 pound smoked kielbasa sausage, sliced
2 pounds uncooked large shrimp, peeled and deveined
1/4 cup dry white wine
1 (14.5-ounce) can diced tomatoes
Chopped chives, for garnish

  • In a heavy-bottomed saucepan, bring the chicken stock, and whipping cream up to a low simmer. While simmering whisk in the grits and a pinch of salt. Stir constantly and return to a low simmer. ½ cup diced tasso ham
2 tablespoons diced onion
2 tablespoons diced green bell pepper

1 cup heavy whipping cream
salt and ground black pepper to taste
1 tablespoon chopped green onion, green parts only
