Yield 8 Patties

Number Of Ingredients 10

1 egg, slightly beaten
1/4 cup onion, finely chopped
1 large clove garlic, minced
2 tablespoons canned diced green chili peppers
1 tablespoons snipped fresh cilantro
1 tablespoons vinegar
1-1/2 teaspoons chili powder
1/8 teaspoons salt
1/8 teaspoons ground red pepper
1/2 pound lean ground pork or beef

Steps:

  • In a medium mixing bowl, combine the egg, onion, garlic, green chili peppers, cilantro, vinegar, chili powder, salt and ground red pepper. Add the ground pork or beef and mix well. Shape the mixture into eight equal-sized patties. Put a small amount of oil in skillet and preheat over medium heat. Place the patties in the skillet and cook about 12 minutes or until meat is no longer pink and juices run clear. Turn once when patties are about half cooked.

Tips:

  • Choose the right sausage: Opt for a flavorful sausage like Mexican chorizo or andouille. If using a mild sausage, add extra spices to the filling.
  • Brown the sausage: Before stuffing the peppers, brown the sausage in a pan to enhance its flavor and texture.
  • Use a variety of vegetables: In addition to bell peppers, try adding other veggies like corn, zucchini, and black beans.
  • Don't overstuff the peppers: Leave some room for the rice and cheese to expand while cooking.
  • Bake the peppers until tender: The peppers should be soft but still hold their shape.
  • Top with your favorite toppings: After baking, top the peppers with shredded cheese, sour cream, salsa, and guacamole.

Conclusion:

These Tex-Mex stuffed peppers are a delicious and versatile dish that can be enjoyed for lunch or dinner. With their combination of flavorful sausage, tender vegetables, and melted cheese, these peppers are sure to be a hit with everyone at the table. Whether you're looking for a quick and easy weeknight meal or a hearty dish to serve at a party, these stuffed peppers are a great option.
