1 envelope taco seasoning, divided

1 cup uncooked instant rice
1 cup canned black beans, rinsed and drained
1 cup sour cream
1 cup shredded cheddar cheese
1-1/2 cups crushed tortilla chips
Minced fresh cilantro

Steps:

  • Sprinkle chicken with 1 tablespoon taco seasoning; transfer to a 5- or 6-qt. slow cooker. In a large bowl, combine the tomatoes, soup, onion, chiles and remaining taco seasoning; pour over chicken. Cover and cook on low for 5-7 hours or until chicken is 165° and tender., Prepare rice according to package directions. Stir in beans; heat through. , Remove chicken from cooking juices; stir sour cream into cooking juices. Serve chicken with rice mixture and sauce. 1 pound spicy sausage meat
1 1/2 cups frozen yellow corn kernels
1 onion, finely chopped
1 red bell pepper, finely chopped
1 jalapeno, finely chopped
1 teaspoon chili powder
Pinch kosher salt
Pinch red pepper flakes
Freshly ground black pepper
4 cups leftover cooked rice
1 tablespoon Worcestershire sauce
1 tablespoon hot sauce, or more to taste
Zest and juice of 1 lime
4 scallions, sliced
1/2 bunch fresh cilantro, chopped

Steps:

  • Heat the oil in a large skillet and brown the sausage meat, breaking it up into small pieces. When starting to brown, add the frozen corn (no need to thaw), onions, bell peppers and jalapenos. Season with the chili powder, salt, red pepper flakes and plenty of black pepper. Cook until the vegetables are crisp-tender.
  • Add the rice and stir-fry until heated through and coated with the vegetable mixture. Add the Worcestershire sauce, hot sauce and lime zest and juice. Stir-fry until the rice is just starting to brown. Add the scallions and stir well so that they are thoroughly mixed in. Serve and garnish with cilantro.

2 cups long grain white rice
Two 14 1/2-ounce cans chicken broth
1 cup diced fire roasted tomatoes, drained

1/2 cup fresh shucked corn kernels or frozen corn
1 teaspoon ground cumin
1 bay leaf

Steps:

  • In a heavy pot, heat the vegetable oil over medium heat. Add the garlic and shallots, and sweat until translucent, stirring often. Add the rice to the oil and stir constantly to lightly cook the rice until lightly golden.

1 clove garlic, chopped
3/4 teaspoon ground cumin

1 15-ounce can no-salt-added black beans, drained and rinsed
1 15-ounce can no-salt-added pinto beans (do not drain)
1 1/2 cups cooked brown rice, thawed if frozen
1/2 cup fresh cilantro, roughly chopped
8 corn tortillas
1/2 cup shredded low-fat cheddar cheese (about 2 ounces)

Steps:

  • Heat the olive oil in a large pot over medium heat. Add the onion and cook, stirring occasionally, until slightly softened, about 5 minutes. Add the garlic, cumin, 1/4 teaspoon salt and a few grinds of pepper; cook until lightly toasted, about 1 minute. Add the tomatoes, black beans, pinto beans and 6 cups water. Bring to a boil, then reduce the heat to medium and stir. Simmer until slightly thickened, about 15 minutes.
  • Remove 1/2 cup of the bean mixture to a bowl using a slotted spoon; mash with a fork, then return to the pot along with the rice and 1/4 cup cilantro. Cook until the soup thickens, about 5 more minutes. Season with salt and pepper. Warm the tortillas in a dry skillet or wrap in damp paper towels and microwave; wrap in foil to keep warm.
  • Top each serving of soup with the cheese and the remaining 1/4 cup cilantro. Serve with the warm tortillas.

After tasting this at a neighbor's Super Bowl party one year, I quickly scribbled down the recipe. This is a fairly simple dish to throw together and is a great accompaniment to Tex-Mex style dishes, although this isn't pretending to be any sort of authentic dish from any one particular region. I have made it many times over the years and this is a great dish for a potluck. Mahatma saffron rice comes in shiny yellow foil tubes in the rice section of your grocery store. I usually follow the microwave instructions for preparing the rice. I serve this as a side dish, but I think a Vegetarian who eats dairy would be able to enjoy this as a meal as well.

2 (5 ounce) packages saffron rice mix, plus ingredients to prepare rice according to package directions (such as Mahatma brand)
1 (10 1/2 ounce) can diced tomatoes with mild green chilies (such as Ro-tel mild or spicy)
1 (15 ounce) can black beans, drained and rinsed well
1/4 cup sour cream, to taste
1/4 cup shredded cheddar cheese, to taste
2 tablespoons fresh cilantro leaves, chopped (optional)

Steps:

  • Prepare the saffron rice according to the package directions,using the amount of oil/butter and water as indicated on the package (I usually use olive oil).
  • While the rice is cooking, rinse& drain the black beans in a mesh strainer to remove all the sludgey canning liquid and dump them into a small saucepan.
  • Pour the entire contents of the diced tomatoes w/chili peppers,liquid and all,into the same pan with the beans and stir to combine.
  • Cover the saucepan with lid,turn on the heat to low, and let bean mixture heat while the rice cooks, stirring occasionally- it should be ready when the rice is done.
  • When the rice is fully cooked, pour it into a deep, medium sized casserole dish.
  • Pour bean mixture into the center of the rice, leaving a border of the yellow rice peeking out arounds the sides.
  • Place the sour cream in the center of the bean mixture in a dollop as a garnish (you can use more if you like).
  • Sprinkle shredded Cheddar cheese over the top of the sour cream and over the beans.
  • Sprinkle with cilantro leaves (optional) if you like and serve immediately.
  • NOTE: If you don't have access to canned diced tomatoes with chilis, then you can substitute an equal amount of chunky salsa, if you like.
  • You may wish to provide a bowl of additional sour cream as well as a bowl of more cheese for guests to add extra to each serving, but it isn't necessary.

1 1/3 c uncooked rice, i use uncle bens
2 2/3 c water
4 boneless, skinless chicken breasts
1 can(s) 10 3/4 oz cream of chicken soup
1 can(s) 10 3/4 oz cream of mushroom soup, i also use golden mushroom
2 c shredded cheddar cheese
2 c monterey jack , shredded, or you can use a tex mex blend
1/2 c sour cream
1 1/2 c salsa, use any heat you want, i use my homemade hot salsa
1 onion, chopped
1 Tbsp tony chachere's creole seasoning ( optional)

Steps:

  • 1. Gather your ingredients
  • 2. Place the rice in the water and bring to a boil. Reduce heat, cover and simmer 20 minutes.
  • 3. Cook the chicken breast is saucepan; covering them with water. Bring to boil and cook for 20 minutes; or till done.
  • 4. When chicken is done; remove from water, when cool enough, shred and add the seasoning, this is not a must, I like the added spice.
  • 5. Preheat oven to 350 degree. Spray a 9 x 13 baking dish with cooking spray.
  • 6. In a medium bowl; combine the cheeses
  • 7. In a medium bowl; mix together soup, sour cream, onion, and salsa.
  • 8. Layer 1/2 of the rice, 1/2 of the chicken, 1/2 of the soup and salsa mixture, and 1/2 of the cheese mixture in prepared dish. Repeat layers, ending with cheese.
  • 9. Bake in preheated oven for about 40 to 45 minutes, or until bubbly.
  • 10. Let rest 20 to 30 minutes before serving, to let set up. I serve this with a dollop of sour cream and hot pepper flakes atop for more added heat; and garlic bread. Or perhaps a salad..This is a very versatile and tasty casserole! This freezes well also. I put it on a paper plate and vacuum sealed it. ENJOY!!

0.5 (16 ounce) can san marzano tomatoes
1/2 sweet onion
3 green onions

  • Blender Hot Sauce- Put all ingredients in the blender and liquify until all ingredients are completly chopped. Refrigerate.
  • Tex-Mex Rice- Put olive oil in a deep saute pan. Heat. Add onions and begin to saute. Add dry rice and cumin, cook and stir until toasted. Add 3 TBS blender hot sauce,and 1 can chicken broth. Cook until liquid is half gone. Remove from stove and cover . Let sit about 5-8 minutes. Enjoy!

2 cups uncooked instant rice

1 1/2 cups salsa verde
2 tablespoons snipped fresh cilantro
1 cup shredded Mexican blend cheese

  • add 1 tsp of the oil to a 12 inch skillet; heat over medium high heath 1-3 minutes or until shimmering. Meanwhile, drain corn; pat dry with paper towels. Add corn to skillet in a single layer. Cook without stirring 5 mintues or until carmelized on one side. Remove corn from skillet; set aside.
  • As corn cooks, cut chicken into 1 inch pieces. Combine chicken and seasoning mix in a large bowl. Add chicken to skiller. Cook over medium-high heat 5-7 minutes or until center of chicken is no longer pink, stirring occasionally. Remove chicken from skillet; set aside.
  • Add remaning 1 tbsp oil to skillet. Add rice; stir until well coated with oul. Add broth and salsa; bring to a simmer over medium-high heath. Cover skillet; reduce heat to low. Simmer 5 minutes or until most of the liquid is absorbed.
  • To serve spoon chicken over rice mixture in skiller, spinkle with cheese and corn. Cover; let stand 5 minutes or until cheese is melted. Sprinkle with cilantro.

4 skinless, boneless chicken breast halves, cut into 1/2 - inch cubes
2 medium onions, chopped
1 green or red bell pepper, chopped , i also added a jumbo jalapeno
2 - 4 oz can diced green chiles
3/4 tsp garlic pepper
salt and pepper

Steps:

  • 1. Gather ingredients:
  • 2. In crock pot, mix together all the ingredients except the chiles and garlic pepper.
  • 3. Cover and cook on low setting 4 to 4 1/2 hours, or until the rice is tender and the chicken is white throughout; do not overcook or the rice will be mushy.
  • 4. Stir in the green chiles and garlic pepper and serve at once. I edited this recipe to include 2 packets of taco seasoning, enchilada sauce, and season to your own preference. I kept tasting as it was cooking, and added Mexican hot chili powder, cumin, and salt. And I cut the rice from 2 cups to 1 1/2 cups..if you like thick, then use 2 cups. The rice will suck up the liquid, so you may want to add chicken broth, more water, enchilada sauce, salsa, or tomato sauce. After more seasoning, it was delicious!

1/2 cup Dijon mustard

1 can kidney beans, drained
1 tablespoon chili powder (more if you like it spicy)
1 teaspoon olive oil
1 large onion or 2 small onions, chopped
1 cup salsa - any kind
1/4 cup water
1 cup uncooked rice
sour cream

Steps:

  • Cook rice according to package directions. At the same time, heat the oil in a skillet. Add onions and sauté till tender and translucent. Then add the chili powder and cook 1 minute. Add beans, salsa and water. If the mixture is too thick, add an additional 1/4 cup water. Bring to a light boil, reduce heat and simmer about 5 minutes - longer if the mixture is too watery. Then serve over the rice with a small dollop of sour cream. Serves 3 to 4 people.

1/2 pound lean ground turkey
1 can (15 ounces) pinto beans, rinsed and drained
1 can (14-1/2 ounces) diced tomatoes, drained
3 tablespoons tomato paste
1 tablespoon chili powder
3/4 teaspoon ground cumin
1/4 teaspoon salt
2 cups hot cooked rice
1/2 cup shredded reduced-fat Mexican cheese blend
1/4 cup sliced green onion

Steps:

  • Cut each tortilla into six wedges; arrange in a single layer on a baking sheet coated with cooking spray. Spray tortillas with cooking spray. Bake at 400° for 8-10 minutes or until crisp; remove to a wire rack to cool., Meanwhile, in a large nonstick skillet coated with cooking spray, cook turkey over medium heat until no longer pink. 1 can(s) cream of chicken soup
1 c salsa, hot, medium or mild
1 c uncooked while rice
1 1/2 c water
1 can(s) corn, drained
garlic powder to taste
salt and pepper, to taste
chile powder, to taste
shredded jack cheese, for topping

Steps:

  • 1. Pre heat oven to 350* Mix all ingredients except chicken in a 9X13 baking dish. Top with chicken pieces. Cover, bake at 350* for 40 minutes. Remove cover, top with shredded cheese. return to oven until cheese melts, aprox. 5 minutes.
