MEXICAN GRILLED CORN

Mexican Grilled Corn image

I consider this to be the greatest corn-on-the-cob recipe of all time. The way the mild, subtly salted cheese works with an ancho-lime mayonnaise, along with that buttery, smoky corn, is a magnificent combination of flavors. Perfecto!

REALLY DIFFERENT GRILLED CORN ON THE COB- TEX MEX STYLE

Really Different Grilled Corn on the Cob- Tex Mex Style image

Fast and delish AND totally unlike any grilled corn you have ever had. Sweet corn on the cob, herbs and parmesan cheese- yes I said cheese!- take the ordinary to the extreme! You can use fresh corn but frozen is so much more convenient and can be better than fresh especially out of season.

Provided by Mamas Kitchen Hope

Categories     Cheese

Time 15m

Yield 4 serving(s)

Number Of Ingredients 7

4 ears corn on the cob, frozen or 4 ears corn on the cob, fresh, husked and cleaned
1/4 cup butter, melted
1/4 cup parmesan cheese, canned is ok
1 pinch sugar
1 pinch salt
cayenne pepper, to taste (optional)
1 -2 teaspoon dried herbs, use what you like, I usually use the same herbs that I used in my main dish- thyme, tarragon, basil

Steps:

  • Remove frozen corn from package and grill until corn is hot and you have nice grill marks.
  • Mix melted butter with remaining ingredients and spread all over hot corn. You can also roll corn in it, dip them or whatever method you choose to get them thoroughly coated with the yummy mixture.
  • Sprinkle corn with added salt if you like.
  • Serve immediately.
  • Tip- If you like your corn REALLY sweet- soak the ears in warm sugar water for 15 minutes or more before grilling. I usually just put the corn in a container and add 1 cup sugar and then cover with water. REALLY sweetens the corn nicely- This method can be used on fresh or frozen.

Tips:

  • Use fresh corn on the cob. Fresh corn has a sweeter flavor and is more tender than corn that has been sitting around for a while.
  • Shuck the corn just before cooking. This will help to prevent the corn from drying out.
  • Cook the corn in a large pot of boiling water. This will help to ensure that the corn cooks evenly.
  • Add salt to the water before cooking the corn. This will help to enhance the flavor of the corn.
  • Cook the corn for 5-7 minutes, or until it is tender. Do not overcook the corn, or it will become tough.
  • Serve the corn immediately with your favorite toppings. Some popular toppings include butter, salt, pepper, chili powder, and lime juice.

Conclusion:

Tex-Mex corn on the cob is a delicious and easy-to-make side dish that is perfect for any occasion. It is also a great way to use up leftover corn. With its sweet and smoky flavor, Tex-Mex corn on the cob is sure to be a hit with everyone at your table. So next time you are looking for a simple but delicious side dish, give Tex-Mex corn on the cob a try. You won't be disappointed!
