1/3 pound firm alpine-style cheese (such as gruyere)
1/3 pound fontina
1/3 pound gouda
2 tablespoons cornstarch
1 cup dry white wine (such as Sauvignon Blanc)
1 clove garlic (minced)
1 tablespoon fresh lemon juice
1 tablespoon brandy
1 teaspoon Dijon mustard
1/8 teaspoon nutmeg
Boiled baby new potatoes in their skins (quartered if large)
Lightly steamed broccoli florets
Lightly steamed cauliflower florets
Lightly steamed asparagus
Button mushrooms (wiped clean and stems removed)
Cherry tomatoes
Sliced firm apples (such as Granny Smith)
Cooked sliced hot sausage
Cubed French, sourdough, and/or pumpernickel bread

Steps:

  • Grate all of the cheeses. In a medium bowl, combine the cheeses with the cornstarch, tossing thoroughly to coat all pieces.
  • In a stove-safe fondue pot or large heavy saucepan, bring the wine, garlic, and lemon juice to a simmer over medium-low heat. Add the cheeses to the simmering liquid a little at a time, stirring well between each addition to ensure a smooth fondue. Once smooth, stir in the brandy, mustard, and nutmeg.
  • Arrange an assortment of bite-size dipping foods on a platter. If necessary, carefully pour the fondue into a fondue pot. Serve with fondue forks or wooden skewers. Dip and enjoy!

TEX-MEX CHEESE FONDUE

Tex-Mex Cheese Fondue image

I went to a fancy Fondue restaurant with my daughter and can't wait to try making fondue myself--it seems so easy! I thought this would be a great recipe to start with. Recipe source: Bon Appetit (February 1990)

Categories     Cheese

Time 20m

Yield 4-6 serving(s)

Number Of Ingredients 13

1 1/4 lbs gruyere or 1 1/4 lbs swiss cheese, grated
1 lb monterey jack cheese, grated
1/4 cup flour
2 garlic cloves, halved
2 1/2 cups white wine
3 tablespoons tequila
1/4 cup fresh cilantro, chopped
2 tablespoons jalapeno peppers, chopped (use the seeds too for an extra kick)
salt
pepper
crusty bread cubes (the restaurant I went to used an assortment of breads, I thought this is a great way to use leftover)
sausage, cooked and sliced (kielbasa or hot Italian)
vegetables, sliced in big chunks

Steps:

  • Place both cheese in a large bowl and add flour, toss.
  • Rub inside of fondue pot with garlic. Discard garlic.
  • Add wine and tequila to pot and warm over medium heat until tiny bubbles appear.
  • Add one handful of cheese mixture to wine mixture and stir constantly until cheese melts. ADJUST HEAT SO MIXTURE DOES NOT BOIL.
  • Repeat with remaining cheese; stirring until thick. Stir in cilantro and chilies and season with salt and pepper.
  • Set pot over candles or Sterno on serving table. Serve with skewers of bread cubes, sausages and/or vegetables.
  • Serve with tortilla chips if desired.

BEST FORMULA THREE-CHEESE FONDUE

Best Formula Three-Cheese Fondue image

We tried a couple of recipes; this was voted the best! The Gruyere gives a very sweet and nutty flavour to the fondue, the sharp Cheddar makes it tangy, and the Emmentaler blends it all. Cooking the flour first helps the mixture not to be so pasty and powdery.

Tips:

  • Choose the right cheese: A good Tex-Mex cheese fondue starts with a blend of melting cheeses. Some popular choices include cheddar, Monterey Jack, and pepper Jack. You can also add other cheeses to taste, such as queso Oaxaca, queso fresco, or crumbled cotija cheese.
  • Use a variety of toppings: The toppings are what really make Tex-Mex cheese fondue special. Some popular choices include cooked chorizo, ground beef, diced tomatoes, chopped onions, and roasted corn. You can also add other toppings to taste, such as black beans, avocado, or cilantro.
  • Serve with a variety of dippers: Cheese fondue is traditionally served with bread or crackers for dipping. However, you can also serve it with other dippers, such as tortilla chips, vegetables, or even fruit.
  • Keep the fondue warm: Cheese fondue is best served warm and melted. If you are using a fondue pot, keep it on low heat to keep the fondue from burning. If you are using a slow cooker, set it to low or warm.
