PRESSURE COOKER TEX MEX BRISKET

Yield 6 servings

Number Of Ingredients 13

1 onion, minced
3 cloves garlic, minced
1 serrano chili, seeded and minced
1-1/2 Tbsp. brown sugar
1 Tbsp. chili powder
1 Tbsp. apple cider vinegar
1 tsp. cumin
1 tsp. salt
1/8 tsp. pepper
3 lbs. beef brisket, trimmed
2 Tbsp. vegetable oil
14 oz. can Mexican style diced tomatoes, undrained
2 onions cut into wedges

Steps:

  • Combine onion, minced garlic, chili, sugar, chili powder, vinegar, cumin, salt, and pepper in a small bowl and mix. Rub this mixture over all sides of beef brisket; transfer meat to a glass dish. Cover and marinate in refrigerator 24-36 hours. Heat oil in a pressure cooker over medium high heat or use "brown function". Cook meat uncovered 6-8 minutes, turning to brown both sides. Add tomatoes, lifting meat to let some tomatoes go under meat. Add onion wedges, then cover pressure cooker and bring to high pressure. Cook for 1 hour at stabilized pressure. Release pressure and carefully remove lid. Slice meat across the grain. Serve pan juices with meat.

Tips:

  • Choose the right cut of brisket: Look for a brisket flat or point with good marbling for tender and flavorful results.
  • Use a flavorful rub: Combine spices like chili powder, cumin, garlic powder, and paprika for a classic Tex-Mex flavor profile.
  • Slow-cook the brisket: Braising or smoking the brisket low and slow allows the connective tissues to break down, resulting in fall-apart tender meat.
  • Add liquid to the cooking vessel: Use beef broth, water, or a combination of both to keep the brisket moist and prevent it from drying out.
  • Cook until the brisket reaches an internal temperature of 200-205°F (93-96°C): This ensures that the collagen has fully broken down and the meat is fork-tender.
  • Let the brisket rest before slicing: Allow the brisket to rest for at least 30 minutes before slicing to redistribute the juices and ensure tender and flavorful meat.

Conclusion:

Tex-Mex brisket is a delicious and versatile dish that can be enjoyed in tacos, burritos, sandwiches, or simply on its own. With its bold flavors and tender texture, this dish is sure to satisfy even the most discerning palates. Whether you're a seasoned pitmaster or a home cook looking to try something new, Tex-Mex brisket is a must-try recipe that will surely impress your family and friends.
