2 tablespoons freshly chopped cilantro leaves
2 teaspoons freshly chopped parsley leaves
1 egg
1/2 teaspoon red pepper flakes
1/2 cup bread crumbs
Salt and fresh ground black pepper

Top with lettuce, tomato and ketchup. Cover the burgers with the top of the bun and serve.

Time 40m

Yield 4 servings

Number Of Ingredients 13

2 cups precut vegetable stir-fry mix (broccoli, bell peppers, onions and/or mushrooms)
1/4 cup extra-virgin olive oil
1 cup frozen cooked brown rice
Kosher salt
1 teaspoon ancho chile powder
1/2 teaspoon ground cumin
1 15-ounce can black beans, drained and rinsed
Freshly ground pepper
1/3 cup breadcrumbs
1 tablespoon chipotle mayonnaise, plus more for topping
4 kaiser rolls
Shredded lettuce, sliced avocado, sliced tomato and pickled jalapeños, for topping
Sweet potato chips, for serving

Steps:

  • Chop the stir-fry mix into 1/2-inch pieces. Heat 2 tablespoons olive oil in a large nonstick skillet over medium-high heat. Add the vegetables, brown rice and a big pinch of salt. Cook, stirring, until the vegetables are softened, about 5 minutes. Stir in the chile powder, cumin, black beans, 3/4 teaspoon salt and a few grinds of pepper. Cook until the beans are hot and the skillet is dry, about 2 minutes.
  • Transfer the mixture to a food processor; reserve the skillet. Pulse 5 to 6 times, until the mixture holds together but is still chunky. Scrape into a large bowl and stir in the breadcrumbs and chipotle mayonnaise. Shape into 4 patties, about 4 inches wide. Place the patties on a plate, cover with plastic wrap and freeze to firm up, about 15 minutes. Meanwhile, split and toast the rolls.
  • Wipe out the reserved skillet, add the remaining 2 tablespoons olive oil and heat over medium-high heat. Add the patties and cook until heated through and a crust forms, about 2 minutes per side. Season with salt.
  • Serve the patties on the rolls with lettuce, avocado, tomato, pickled jalapenos and chipotle mayonnaise. Serve with chips.

Tips:

  • Use ripe black beans: Soaking dried black beans overnight before cooking them will help them soften and cook more evenly. If you're short on time, you can use canned black beans, but be sure to rinse them well before using them.

  • Don't overcook the black beans: Overcooked black beans will become mushy and lose their flavor. Cook them just until they are tender, about 1 hour if using dried beans or 15 minutes if using canned beans.

  • Season the black beans well: A good combination of spices to use for black beans includes cumin, chili powder, garlic powder, and onion powder. You can also add other spices, such as cayenne pepper or paprika, to taste.

  • Use a good-quality breadcrumb: Panko breadcrumbs are a good option for black bean burgers because they are light and airy and will help to hold the burgers together. You can also use regular breadcrumbs, but they will make the burgers a bit denser.

  • Form the burgers gently: Overworking the black bean mixture will make the burgers tough. Gently form the mixture into patties, using your hands or a burger press.

  • Cook the burgers over medium heat: Cooking the burgers over medium heat will help to prevent them from burning on the outside while still cooking through in the middle. Cook the burgers for about 4 minutes per side, or until they are cooked through.

Conclusion:

Tex-Mex black bean burgers are a delicious and versatile dish that can be enjoyed by people of all ages. They are easy to make and can be customized to your own taste preferences. Whether you serve them on a bun with lettuce, tomato, and cheese, or over a salad with a dollop of sour cream, these burgers are sure to be a hit.
