3 tablespoons light brown sugar

Steps:

  • For the teriyaki sauce: Combine all ingredients except cornstarch in a small pot and bring to low boil, then reduce heat. Whisk together the cornstarch in a few tablespoons water in a small bowl, then add to sauce to thicken to coat spoon. Remove from heat.
  • For the stir-fry: Place meat in freezer for a few minutes to firm, then trim as needed and halve the tenderloin lengthwise. Press into an even layer and thinly slice meat on bias resulting in thin and uniform strips of pork. Pat meat dry and season.
  • Heat a large skillet over high heat with oil to coat. When oil smokes and ripples, add pork in 2 batches if necessary to avoid crowding, then cook, stirring occasionally, until browned in places and crispy at edges; remove to plate and repeat if necessary.
  • Add a bit more oil if pan looks dry and stir-fry the leeks 1 to 2 minutes, then add garlic and peppers and add meat, broccolini, if using, and pour over 2/3 cup teriyaki sauce to combine.
  • Serve the teriyaki stir-fry with rice and garnishes of choice.

Steps:

  • Mix all Teriyaki Marinade ingredients. Fold thin end of each pork tenderloin under so pork is an even thickness; secure with toothpicks. Place pork in resealable plastic food-storage bag or shallow glass or plastic dish. Pour marinade over pork; turn pork to coat with marinade. Seal bag or cover dish and refrigerate at least 8 hours but no longer than 24 hours, turning pork occasionally.
  • Brush grill rack with vegetable oil. If using charcoal grill, place drip pan directly under grilling area, and arrange coals around edge of firebox. Heat coals or gas grill for indirect heat.
  • Remove pork from marinade; reserve marinade. 2 tablespoons light-colored honey
1 teaspoon rice vinegar

1 teaspoon ground ginger
½ teaspoon onion powder
½ teaspoon sesame oil
2 tablespoons no-salt-added chicken broth
1 tablespoon cornstarch
1 thinly sliced green onion
½ teaspoon toasted sesame seeds

Steps:

  • Place pork tenderloin into the bottom of a multi-functional pressure cooker (such as Instant Pot®). Combine 3/4 cup chicken broth, soy sauce, honey, rice vinegar, garlic, ginger, onion powder, and sesame oil in a small bowl; stir to combine. Pour marinade over the tenderloin and turn to coat.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 3 minutes. Allow 10 to 15 minutes for pressure to build.

Steps:

  • 1. Combine the soy sauce, pineapple juice, brown sugar, mirin, sesame oil, ginger, and garlic in a small bowl and whisk to combine.
  • 2. Pour the mixture into a 1-gallon resealable bag. Add the pork tenderloin and seal, pushing as much air out as possible. Place in a shallow pan and refrigerate, turning occasionally, for a minimum of two hours or overnight.
  • 3. Pull the tenderloin from the refrigerator at least 30 minutes to an hour before cooking and let it warm on the counter. Preheat grill to medium high. Oil grate.
  • 4. Remove the pork from the bag, reserving the marinade. Bring the reserved marinade to a boil in a small saucepan and cook until reduced by half, about 5 to 8 minutes.
  • 5. Place the pork on the grill. Cover and cook, turning the tenderloin only once, until internal temperature reaches 140°F , about 5 to 7 minutes per side. Brush the sauce over the tenderloin during the final minutes of cooking and serve the remainder on the side.

My entry into the 2009 Canadian Living Magazine Cook of the Year Contest. The recipe did not make the cut, but it is tasty and certainly worthy of sharing. You will note the absence of salt and/or pepper. I am thinking there is sufficient sodium and seasonings in the Teriyaki sauce and Dijon Mustard to justify eliminating additional seasoning from the recipe.... Salt/Sodium should never overpower other ingredients. If additional salt is requested, by all means, do provide it, but suggest that they taste first, and salt second. Pork Tenderloin can be purchased from your local supermarket in packages of two tenderloins, weighing approximately one kilo. This is usually sufficient for a dinner serving 4. This recipe was originally developed to serve 8; you will therefore require two packages of pork tenderloin - 2 loins per package..... As they say in Ontario "PUT PORK ON YOUR FORK".

4 fresh pork tenderloin
1/3 cup water
3 -4 tablespoons extra virgin olive oil
1 cooking apple
1 medium size cooking onion, sliced
8 medium size fresh mushrooms
2 garlic cloves, peeled, crushed and chopped fine
2 tablespoons rubbed sage
1/3 cup liquid honey
1/3 cup teriyaki sauce
1/4 cup smooth Dijon mustard
15 -20 cherry tomatoes (to garnish)
2 -3 sprigs fresh herbs (to garnish, eg, parsley, sage, rosemary)

Steps:

  • Oven 350°F.
  • Peel, core and rough chop the apple. In a small, covered sauce pan add 1/3 C water and chopped apple. Over medium/low heat, cook into unsweetened apple sauce. If the apple sauce is a bit lumpy, that's OK; it will cook down during the roasting process. Mix well, then set aside for later use.
  • Clean and quarter mushrooms.
  • Add about 2 tbsp extra virgin olive oil to a saute pan deep enough to hold all the mushrooms, with stems, and sliced onion. Over medium heat, clarify onion; add mushrooms and garlic; cover the pan, and allow to saute, for about 5 minutes.
  • Add rubbed sage to mushroom/onion mixture and combine well. Remove from heat.
  • In a mixing bowl, place honey, teriyaki sauce, Dijon mustard; add unsweetened apple sauce (which you had set aside).
  • Add mushrooms and onion to honey mixture and mix well.
  • Add additional olive oil to same frying pan and brown pork tenderloin on all sides.
  • Arrange pork tenderloin in oval, roasting pan with a cover. Roasting pan should comfortably accommodate all 4 tenderloins. Pour prepared mushroom/onion mixture over tenderloins in roasting pan. Cover and bake one hour.
  • When done, remove tenderloin from roasting pan to warmed serving platter. Cover with foil and allow to sit for about 10 minutes. Return roasting pan to low heat on stove top, to keep the sauce hot.
  • Carve each tenderloin in half. You will have 8 tenderloin pieces, 6 to 8 oz. each. Arrange on warmed serving platter and spoon mushroom/onion sauce over the meat. Arrange cherry tomatoes around the serving platter; garnish with sprigs of fresh herbs.
  • Serve with rice, orzo, potatoes, and vegetables of your choosing; additional sauce in a gravy boat would not go amiss.

1 can Pineapple chunks
1/2 cup Teriyaki sauce
1 Tblsp. Rice Wine vinegar
1/2 tsp. Red Pepper flakes
1 tsp. Granulated Onion
1 tsp. Granulated Garlic
4 Garlic cloves, minced
Salt and Pepper to taste
Drizzle of Honey
3-4 lbs. Pork Tenderloin

Steps:

  • In a shallow glass dish mix or ziploc bag drain the juice from the can of pineapple (reserve the pineapple chunks). Add teriyaki sauce, rice wine vinegar, red pepper flakes, granulated onion and garlic, minced garlic, salt and pepper. Mix will and place pork in the marinade. Drizzle with honey. Leave in marinade at 2 hours but can sit overnight. When ready to cook, heat grill and remove pork from the marinade. Place on the grill and cook to until internal temp is 160 degrees. While grilling the meat, bring the marinade to a boil and add pineapple chunks. More over pork when done.
