CHICKEN TERIYAKI

Chicken Teriyaki image

Teriyaki is derived from the Japanese root words teri, to shine, and yaki, to broil or grill. That's the way traditional teriyaki looks: shiny and incised with grill marks. In Japan, teriyaki is a mix of soy sauce, sake and the rice wine mirin, which imparts a subtle sweetness. The teriyaki found throughout Seattle, of which this is an adaptation, is a bit more showy. Cooks sweeten with white sugar and pineapple juice. They thicken with cornstarch. Ginger and garlic go into the mix because of the Korean ancestry of many cooks. It is not at all traditional, but it is simple to prepare and addictive to eat. Be sure to plan ahead as you do need to marinate the chicken before cooking. An overnight stay in the fridge is ideal, but many readers have been happy with a quick marinade of an hour or so.

Time 30m

Yield 8 servings

Number Of Ingredients 10

1 cup soy sauce
1 cup granulated sugar
1 1/2 teaspoons brown sugar
6 cloves garlic, crushed in a press
2 tablespoons grated fresh ginger
1/4 teaspoon freshly ground black pepper
1 3-inch cinnamon stick
1 tablespoon pineapple juice
8 skinless, boneless chicken thighs
2 tablespoons cornstarch

Steps:

  • In a small saucepan, combine all ingredients except cornstarch and chicken. Bring to boil over high heat. Reduce heat to low and stir until sugar is dissolved, about 3 minutes. Remove from heat and let cool. Discard cinnamon stick and mix in 1/2 cup water.
  • Place chicken in a heavy-duty sealable plastic bag. Add soy sauce mixture, seal bag, and turn to coat chicken. Refrigerate for at least an hour, ideally overnight.
  • Remove chicken and set aside. Pour mixture into a small saucepan. Bring to a boil over high heat, then reduce heat to low. Mix cornstarch with 2 tablespoons water and add to pan. Stir until mixture begins to thicken, and gradually stir in enough water (about 1/2 cup) until sauce is the consistency of heavy cream. Remove from heat and set aside.
  • Preheat a broiler or grill. Lightly brush chicken pieces on all sides with sauce, and broil or grill about 3 minutes per side. While chicken is cooking, place sauce over high heat and bring to a boil, then reduce heat to a bare simmer, adding water a bit at a time to keep mixture at a pourable consistency. To serve, slice chicken into strips, arrange on plates, and drizzle with sauce.

TURMERIC-BLACK PEPPER CHICKEN WITH ASPARAGUS

Turmeric-Black Pepper Chicken With Asparagus image

In this sweet and spicy stir-fry, black pepper, honey and rice vinegar help accentuate turmeric's delightfully earthy qualities. Thinly sliced asparagus doesn't need much time to cook, but feel free to swap with any other vegetables that cook in just a few minutes, like thinly sliced green beans, frozen peas or baby spinach. Serve this with rice or rice vermicelli noodles, or tuck it into a lettuce cup or pita with yogurt and fresh herbs. You could also trade the chicken for tofu, shrimp or cubed pork shoulder.

Number Of Ingredients 10

3 tablespoons honey
3/4 teaspoon black pepper, plus more to taste
Kosher salt

1 1/2 teaspoons ground turmeric
1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
1 tablespoon coconut or canola oil
12 ounces asparagus, trimmed and thinly sliced on an angle
1 teaspoon unseasoned rice vinegar or soy sauce
1 lime, cut into wedges (optional)

Tips:

  • Mise en place: Before you start cooking, make sure you have all of your ingredients and equipment ready to go. This will help you stay organized and prevent scrambling later on.
  • Choose the right chicken: Boneless, skinless chicken thighs or breasts are the best choices for this recipe. They're tender and juicy, and they cook quickly.
  • Marinate the chicken: Marinating the chicken in the teriyaki sauce for at least 30 minutes (or up to overnight) will help it absorb the flavors and make it even more delicious.
  • Cook the chicken properly: Cook the chicken over medium heat until it's cooked through but still tender. Overcooking will make it dry and tough.
  • Use fresh asparagus: Fresh asparagus is essential for this recipe. Look for asparagus that is bright green and has tightly closed tips.
  • Roast the asparagus: Roasting the asparagus brings out its natural sweetness and flavor. You can also grill or sauté the asparagus, if you prefer.
  • Make the teriyaki sauce ahead of time: You can make the teriyaki sauce up to a week ahead of time and store it in the refrigerator. This will save you time when you're ready to cook the chicken.
  • Serve the chicken and asparagus with rice or noodles: This dish is traditionally served with rice or noodles. You can also serve it with mashed potatoes or roasted vegetables.

Conclusion:

This teriyaki chicken with asparagus is a quick and easy weeknight meal that is sure to please the whole family. The chicken is tender and juicy, the asparagus is roasted to perfection, and the teriyaki sauce is sweet and savory. This dish is also healthy and budget-friendly, making it a great choice for busy families.
