Tips:

  • Choose high-quality, organic, and air-chilled chicken. If using chicken breasts, lightly pound them to ensure even cooking.
  • Use a large and deep skillet or Dutch oven to accommodate all the ingredients comfortably and prevent overcrowding.
  • Sear the chicken in batches if necessary to avoid overcrowding the pan. This will help brown the chicken evenly and prevent steaming.
  • Use a combination of olive oil and butter for sautéing vegetables to add richness and flavor to the dish.
  • Select ripe and flavorful tomatoes for the sauce. San Marzano tomatoes are a popular choice due to their meaty texture and low acidity.
  • Use a high-quality dry white wine. A dry Chardonnay or Pinot Grigio works well.
  • Add chicken broth or stock to the sauce for extra depth of flavor. You can also use water, but the flavor will be less pronounced.
  • Season the dish generously with salt, pepper, and dried oregano. Adjust seasonings to taste.
  • Simmer the chicken and sauce for at least 30 minutes, or until the chicken is cooked through and the sauce has thickened. Stir occasionally to prevent burning.
  • Garnish the dish with fresh parsley or basil before serving.
