3 medium red onions, 2 whole, 1 minced
1 tablespoon canola oil
3/4 cup frozen prickly pear cactus puree, thawed

2 serrano chiles, ribs and seeds removed, minced
3 garlic cloves, minced
1 teaspoon lime zest
1/2 cup white Worcestershire sauce
1/2 cup tequila
1/4 cup apple cider vinegar
2 tablespoons lime juice
3/4 cup water
2 teaspoons kosher salt

Steps:

  • Preheat an outdoor grill to medium heat.
  • Brush the pork tenderloins with oil. Season generously with salt and pepper.
  • Use a clean cloth or rolled paper towels soaked with oil to season the grill. Grill the tenderloins, turning as necessary to mark them well on all sides. Use a basting brush to coat the tenderloins with sauce. Turn the tenderloins about every 2 minutes and reapply sauce to ensure even caramelization. Cook until an instant-read thermometer inserted in the center registers 145 degrees F (for medium doneness) to 160 degrees F (for well done).
  • Remove the tenderloins to a wire rack or plate to rest. Rest in a warm place for at least 5 to 7 minutes. Bring leftover sauce to a simmer and cook for 5 minutes. Slice and serve with sauce for dipping or drizzling.
  • Coat the whole red onions with canola oil and roast until inside layers are very soft, about 1 hour. Peel the onions and discard outer layers if blackened. Place in blender with prickly pear cactus puree and blend at high speed until completely smooth. Preheat oven to 350 degrees F.
  • Heat 1 tablespoon of butter in a saucepan over medium heat. Saute minced onions until lightly caramelized, about 5 minutes. Add coriander, cumin, pepper flakes, serrano, garlic, and lime zest. Cook until fragrant, about 2 minutes.
  • Add Worcestershire, tequila, cider vinegar and lime juice. Cook over medium-high heat until reduced by half.
  • Stir in onion/cactus fruit puree, water and salt, to taste, and bring to a simmer.
  • Remove from heat and swirl in the remaining butter. The sauce may be blended to achieve a smoother consistency or left as it is.

SALMON WITH TEQUILA CREAM SAUCE

SALMON WITH TEQUILA CREAM SAUCE image

Categories     Fish     Sauté

Yield 4 People

Number Of Ingredients 12

Ingredients: salmon tequila sauce
3 fresh jalapeno chilies
45ml/3 tbsp olive oil
1 small onion, finely chopped
150ml/¼ pint fish stock
Grated rind and juice of 1 lime
120ml/4fl oz single cream
30ml/2 tbsp reposada tequila
1 firm avocado
4 salmon fillets
Salt and ground white pepper
Strips of green pepper and fresh flat leaved parsley to garnish

Steps:

  • Method 1. Roast the chilies in a frying pan until the skins are blistered, being careful not to let the flesh burn. Put them in a strong plastic bag and tie the top to keep the steam in. Set aside for 20 minutes. 2. Heat 15ml/1 tbsp of the oil in a saucepan. Add the onion and fry for 3-4 minutes, then add the stock, lime rind and juice. Cook for 10 minutes, until the stock starts to reduce. Remove the chilies from the bag and peel off the skins, slit and scrape out the seeds. 3. Stir the cream into the onion and stock mixture. Slice the chili flesh into strips and add to the pan. Cook over a gentle heat, stirring constantly, for 2-3 minutes. Season to taste with salt and white pepper. 4. Stir the tequila into the onion and chili mixture. Leave the pan over a very low heat. Peal the avocado, remove the stone and slice the flesh. Brush the salmon fillets on one side with a little of the remaining oil. 5.Heat a frying pan or ridged grill pan until very hot and add the salmon, oiled side down. Cook for 2-3 minutes, until the underside is golden, then brush the top with oil, turn each fillet over and cook the other side until the fish is cooked and flakes easily when tested with the tip of a sharp knife. 6. Serve on a pool of sauce, with the avocado slices. Garnish with strips of green pepper and fresh parsley. This is good with fried potatoes

TEQUILA CREAM SAUCE PASTA

TEQUILA CREAM SAUCE PASTA image

Categories     Sauce     Pasta     Tomato     Vegetarian     Quick & Easy     Dinner

Yield 4 bowls

Number Of Ingredients 12

1 pound penne or farfalle pasta
1 tablespoon extra virgin olive oil
1 medium onion, peeled, finely chopped
1 teaspoon crushed garlic (from jar)
1/4 to 1/2 teaspoon red pepper flakes, or to taste
1/4 cup of premium white or gold tequila
1 15-ounce can diced tomatoes
1 tablespoon tomato paste
1/2 teaspoon salt, or to taste
1/2 cup heavy cream
Freshly ground black pepper
Chopped flat-leaf parsley (optional)

Steps:

  • Cook pasta in 5 quarts of boiling salted water to al dente stage. Drain but do not rinse. While the pasta is cooking, heat olive oil in a 2-1/2 quart non-aluminum saucepan. Add onion and, over medium heat, saute, stirring, until onion is translucent but not browned. Add garlic; stir and saute for 1 minute. Add red pepper flakes; stir and sauté for 1 minute. Add tequila, tomatoes and tomato paste and salt. Bring to boil, lower heat and simmer until sauce is thickened, about 15 minutes, stirring occasionally. Add cream and simmer, stirring, for about 5 minutes. In a large bowl, toss drained pasta with sauce. Divide among 4 heated bowls. Garnish each with freshly ground pepper and chopped parsley, if desired.

Tips:

  • For the best flavor, use fresh, ripe tomatoes. If you don't have fresh tomatoes on hand, you can use canned diced tomatoes, but make sure to drain them well before using.
  • To make the sauce spicier, add more jalapeño peppers or cayenne pepper. If you're not sure how spicy you like your sauce, start with a small amount and add more to taste.
  • If you don't have cilantro on hand, you can use parsley or basil as a substitute. However, cilantro gives the sauce its characteristic flavor, so it's best to use it if you can.
  • To make the sauce smoother, blend it with an immersion blender or in a food processor until it reaches your desired consistency.
  • Tequila sauce can be stored in the refrigerator for up to 3 days. You can also freeze it for up to 3 months.

Conclusion:

Tequila sauce is a delicious and versatile sauce that can be used on a variety of dishes. It's perfect for tacos, burritos, enchiladas, and other Mexican-inspired dishes. It can also be used as a dipping sauce for chips or vegetables. With its smoky, spicy, and slightly sweet flavor, tequila sauce is sure to be a hit at your next party or gathering.
