1 large fresh pineapple, peeled, cored and cut into 1 inch thick slices
1/2 cup tequila
6 tablespoons orange marmalade
3/4 cup brown sugar
6 tablespoons butter
1 1/2 teaspoons vanilla extract
1/2 teaspoon ground cinnamon
1 teaspoon of fresh mint, finely sliced

Steps:

  • Mix tequila, marmalade, sugar, butter, vanilla, cinnamon and mint together heat till sugar is dissolved.

¾ cup tequila
½ cup chopped fresh cilantro
⅓ cup light brown sugar
¼ teaspoon paprika
¼ teaspoon chili powder

  • Preheat the grill to medium heat.
  • Cut the pineapple wedges into about 2x2 cubes.
  • Thread the pineapple pieces onto the bamboo skewers; you'll need 6 to 8 skewers. Set aside.

1 teaspoon coconut, shredded and toasted
