Provided by Annacia

Categories     Cherries

Time 25m

Yield 4 serving(s)

Number Of Ingredients 15

1 (16 ounce) can pitted dark sweet cherries in juice
1/4 cup ruby port
1/2 cup beef broth
1 teaspoon drained bottled horseradish
1 teaspoon tomato paste
1 shallot, thinly sliced
1 large bay leaf
1/2 teaspoon whole black peppercorn
1 teaspoon arrowroot or 1 teaspoon cornstarch
1 tablespoon mild olive oil
4 (6 ounce) beef tenderloin steaks
salt & freshly ground black pepper
1/4 cup kirsch (cherry brandy)
1 tablespoon unsalted butter, at room temperature
1 tablespoon grenadine

Steps:

  • Drain the cherry juice into a large saucepan and set the cherries aside.
  • Add the port, beef broth, horseradish, tomato paste, shallot, bay leaf, and peppercorns.
  • Bring to a boil over medium heat and cook until the mixture is reduced to about 2/3 cup, 12 to 15 minutes.
  • Dissolve the arrowroot in 1 teaspoon water and stir into the sauce.
  • Simmer until the sauce is shiny and slightly thickened, 1 minute longer.
  • Strain, cover, and set aside (This can be prepared a few hours ahead if you refrigerate the sauce, bring it to room temperature before proceeding.)
  • Heat the olive oil in a large, heavy skillet over high heat.
  • Sprinkle the steaks with salt and pepper and add them to the hot oil.
  • Brown the steaks on both sides and cook until medium-rare (about 6 minutes total) or to your liking.

  • Stir in the butter and grenadine syrup, the sauce should be bright red.
  • Cook until the beef is heated through, about 2 minutes longer.
  • Season the sauce to taste with salt and pepper, if necessary.
  • Transfer the beef tenderloin steaks to warmed dinner plates.
  • Spoon the cherry sauce over them and serve at once.

Time 8h50m

Yield 4

Number Of Ingredients 16

1 pound pork tenderloin, trimmed of fat
2 cups olive oil
¾ cup soy sauce
2 medium limes, juiced
2 tablespoons minced onion
2 teaspoons minced fresh ginger root
2 teaspoons white sugar
2 teaspoons flavor enhancer (such as Accent®)
1 (10 ounce) jar cherry preserves
½ cup red wine
2 tablespoons light corn syrup
¼ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground cloves
¼ teaspoon salt
¼ cup slivered almonds

Steps:

  • Place pork in a large glass or ceramic bowl. Pour in olive oil, soy sauce, lime juice, minced onion, ginger, sugar, and flavor enhancer for marinade. Toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 8 hours, or overnight.
  • Preheat the oven to 425 degrees F (220 degrees C).
  • Remove pork from the refrigerator and place in a shallow baking pan. Cover with some of the marinade and discard the rest.
  • Cook in the preheated oven until pork is slightly pink in the center, 20 to 30 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Let stand for 15 minutes before slicing.
  • While pork is resting, prepare sauce: Combine cherry preserves, wine, corn syrup, cinnamon, nutmeg, cloves, and salt in a saucepan and bring to a boil; remove from heat. Keep warm.
  • Drizzle sauce over pork, top with almonds, and serve.

Tips:

  • Choose high-quality tenderloin steaks: Look for steaks that are at least 1 inch thick and have a good amount of marbling.
  • Season the steaks well: Season the steaks generously with salt and pepper before cooking. You can also add other seasonings, such as garlic powder, onion powder, or paprika.
  • Cook the steaks over high heat: Sear the steaks over high heat in a pan or on a grill. This will create a nice crust on the outside of the steaks while keeping the inside tender and juicy.
  • Let the steaks rest before serving: Once the steaks are cooked, let them rest for a few minutes before slicing and serving. This will allow the juices to redistribute throughout the steaks, making them even more tender and flavorful.
  • Make sure the cherry sauce is well-balanced: The cherry sauce should be sweet and tart, with a slight hint of acidity. If the sauce is too sweet, add a little bit of lemon juice or vinegar. If the sauce is too tart, add a little bit of sugar or honey.

Conclusion:

Tenderloin steaks with cherry sauce is a classic dish that is perfect for a special occasion. The steaks are tender and juicy, and the cherry sauce is sweet and tart. This dish is sure to impress your guests.
