Time 1h50m

Yield 4 servings

Number Of Ingredients 9

Nonstick cooking spray, for the baking dish
1 1/2 cups long-grain white rice
1 teaspoon dried basil
1 teaspoon garlic powder
Kosher salt and freshly ground black pepper
Two 14.5-ounce cans diced tomatoes (not drained)
1 1/2 cups creamy tomato soup (canned or boxed)
4 boneless, skinless chicken breasts (about 6 ounces each)
One 1-ounce package onion soup mix

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9-by-13-inch baking dish with nonstick spray.
  • Combine the rice, dried basil, garlic powder, 1/2 teaspoon salt (see Cook's Note) and a few grinds pepper in the baking dish. Add the diced tomatoes and tomato soup and stir to evenly disperse.
  • Place the chicken breasts on top of the rice mixture side-by-side in a single layer. Sprinkle the chicken breasts with 1/2 teaspoon salt and a few grinds of pepper. Sprinkle the onion soup mixture over the top of the entire dish, concentrating a little more heavily on the chicken (the onions will brown more evenly there and flavor the chicken).
  • Cover the baking dish tightly with aluminum foil and bake until the chicken and rice are cooked through, about 1 hour and 25 minutes. Let sit, still covered, for 15 minutes to allow the rice to absorb any remaining liquid. Uncover and serve.

JUICY NO PEEK CHICKEN

Juicy No Peek Chicken image

made with 1 box Long Grain Wild Rice, original recipe Uncle Ben's in the ingredients and cook. Wouldn't let me add it in the ingredient list.

Time 2h20m

Yield 1 pan, 4 serving(s)

Number Of Ingredients 3

1 (14 1/2 ounce) can cream of mushroom soup
1 (14 1/2 ounce) can cream of celery soup
1 (14 1/2 ounce) can water

Steps:

  • (You can add another can of water for moister rice.).
  • Chicken breasts or tenders.
  • In a greased 9 x 13 pan, mix the box of rice, cans of celery and mushroom soup and.
  • one can of water. I always add the extra can of water because I like moist rice.
  • Arrange the raw chicken on top of the rice mixture....
  • Cover and seal with foil.......
  • Bake at 350 degrees for 2 1/2 hours and "Don't Peek!".

Tips:

  • Use a meat thermometer to ensure the chicken is cooked to perfection. Chicken is safe to eat when it reaches an internal temperature of 165°F (74°C).
  • Don't overcrowd the pan. If you're cooking a lot of chicken breasts, cook them in batches so that they have enough space to cook evenly.
  • Use a non-stick pan or cooking spray to prevent the chicken from sticking.
  • Season the chicken breasts with salt and pepper, or your favorite seasonings, before cooking.
  • Cover the pan with a lid while cooking. This will help the chicken cook more evenly and prevent it from drying out.
  • Let the chicken rest for a few minutes before slicing and serving. This will help the juices redistribute throughout the chicken, making it more tender and flavorful.

Conclusion:

The no-peek chicken breasts recipe is a simple and easy way to cook chicken breasts that are tender, juicy, and flavorful. By following the tips above, you can ensure that your chicken breasts turn out perfect every time. This recipe is a great option for busy weeknight dinners or for meal prepping for the week ahead.
