Time 20m

Yield 2 serving(s)

Number Of Ingredients 6

1 skinless chicken breast, cut in half lengthways
1 teaspoon minced garlic
1/2-3/4 cup red wine
1/2 teaspoon dried Italian herb seasoning
1/4 cup tomato paste
100 g baby spinach leaves

Steps:

  • Heat a non-stick pan over medium heat and spray with cooking oil spray.
  • Add the garlic and cook gently, do not brown.
  • Add the chicken and cook until chicken is just about cooked through, turning regularly so both sides cook evenly.
  • Add the wine, tomato paste and herbs.
  • Stir so that the paste mixes into the wine.
  • Bring to a simmer and cook about 5 minutes or until chicken is just cooked through.
  • Add the spinach leaves and mix through so they just wilt then quickly remove from the heat.
  • Serve the chicken with spinach leaves on top and sauce drizzled over the spinach.
  • Nice served with steamed broccoli and pasta or potatoes.

Tips:

  • Mise en place: Before you start cooking, make sure you have all the ingredients and equipment you need. This will help you stay organized and prevent any scrambling during the cooking process.
  • Choose the right chicken: For this recipe, boneless, skinless chicken breasts or thighs are best. You can also use a whole chicken, but you'll need to adjust the cooking time.
  • Brown the chicken: Browning the chicken before braising it gives it a nice color and flavor. Make sure you brown the chicken in a hot skillet over medium-high heat. Don't overcrowd the skillet, or the chicken won't brown properly.
  • Use a good-quality red wine: The red wine you use for braising the chicken should be one that you would enjoy drinking. A full-bodied red wine, such as a Cabernet Sauvignon or Merlot, will work well.
  • Don't boil the wine: When you add the red wine to the skillet, bring it to a simmer over medium heat. Do not boil the wine, or the alcohol will evaporate and the sauce will lose its flavor.
  • Cook the chicken until it is tender: The chicken is done cooking when it reaches an internal temperature of 165 degrees Fahrenheit. You can use a meat thermometer to check the temperature.
  • Serve immediately: Once the chicken is cooked, serve it immediately with the red wine sauce and baby spinach. You can also garnish the dish with fresh parsley or chives.

Conclusion:

This tender chicken and baby spinach in red wine is a delicious and easy-to-make dish that is perfect for a weeknight dinner. The chicken is braised in a flavorful red wine sauce and served over baby spinach. The dish is sure to please everyone at the table.
