Tips:

  • Use a food processor or high-powered blender to grind the teff flour as finely as possible. This will result in a smoother, more consistent muffin.
  • If you don't have a food processor or high-powered blender, you can use a regular blender or coffee grinder to grind the teff flour. Just be sure to grind it in small batches and pulse it until it is very fine.
  • Be sure to measure the teff flour correctly. Too much teff flour will result in a dry, dense muffin.
  • Don't overmix the batter. Overmixing will develop the gluten in the flour and result in a tough muffin.
  • Fill the muffin cups only about 2/3 full. This will allow the muffins to rise properly.
  • Bake the muffins in a preheated oven. This will help them to rise evenly.
  • Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Conclusion:

Teff muffins are a delicious and nutritious breakfast or snack. They are easy to make and can be customized to your liking. With a variety of flavors and add-ins to choose from, there is sure to be a teff muffin recipe that everyone will enjoy.
