This is an easy recipe that my grandmother used to serve in the spring. My brother still refers to this dish as "Easter eggs". Slices of onion or hot pepper may also be added to the pickling liquid with the beets and eggs.

1 cup beet juice (add water, if necessary, to make 1 cup)
1/2 cup brown sugar (packed)

12 hard-boiled large eggs, peeled
1 cup sugar
1 cup water
1 cup cider vinegar

  • Drain beets, reserving 1 cup juice (discard remaining juice or save for another use). Place beets and eggs in a 2-qt. glass jar. , In a small saucepan, bring the sugar, water, vinegar and reserved beet juice to a boil. Pour over beets and eggs; cool., Cover tightly and refrigerate for at least 24 hours before serving.

6 c sliced cucumbers
1 c onion sliced thinly
4 clove garlic cloves whole
fresh dill
1 c cider vinegar
2 c sugar
1 Tbsp each celery seed and cumin seed
2 Tbsp canning salt

Steps:

  • 1. Get two quart jars and sanitize them. Add the fresh dill to each jar. layer each jar with cucumbers and onions.
  • 2. Mix the cider vinegar, sugar, celery seed, cumin and salt. Pour even amounts over each jar of cucumbers. Finish the jars with water.
  • 3. Place lids on the jars and shake the jars. Place in refrigerator and shake a couple of times during the next 24 hours. Ready to eat.

10 eggs, hard boiled
2 15 ounce jars of sliced beets, juice reserved
1 onion, chopped
1 c white sugar
3/4 c apple cider vinegar
1/2 tsp salt
1/8 tsp black pepper
3 bay leaves
15 whole cloves

Steps:

  • 1. Boil the eggs, cool and peel.
  • 2. Put beets, onion and peeled eggs in a large glass or plastic jar that has a lid
  • 3. In medium saucepan, combine sugar, 1 cup beet juice, vinegar, salt, pepper, bay leaves and cloves. Boil, then simmer 10 minutes.
  • 4. Pour saucepan contents into jar, screw on lid, and refrigerate at least two days.
  • 5. **NOTE: Shake up jar two times a day for even coloring. I refrigerate for FOUR days to have the purple hue permeate the entire egg white. Sometimes I cut the eggs in half right before serving for an added visual pizazz! **Also, I've boiled fresh beets, reserving that juice, and have had great-if not better-results.

1 onion, chopped

¾ cup cider vinegar
½ teaspoon salt
1 pinch ground black pepper
2 bay leaves
12 whole cloves

  • Place eggs in saucepan and cover with water. Bring to boil. Cover, remove from heat, and let eggs sit in hot water for 10 to 12 minutes. Remove from hot water, cool, and peel.
  • Place beets, onion, and peeled eggs in a non-reactive glass or plastic container. Set aside.
  • In a medium-size, non-reactive saucepan, combine sugar, 1 cup reserved beet juice, vinegar, salt, pepper, bay leaves, and cloves. Bring to a boil, lower heat, and simmer 5 minutes.
  • Pour hot liquid over beets and eggs. Cover, and refrigerate 48 hours before using.
