1 stalk celery, thinly sliced
1 carrot, peeled and thinly sliced
1/4 cup green pepper, finely chopped
1 small onion, finely chopped
3 (14 1/2 ounce) cans chicken broth
1 (12 ounce) can light beer, room temperature
1/2 teaspoon salt
1/4 teaspoon pepper
5 tablespoons cornstarch
1/4 cup water
1 cup shredded sharp cheddar cheese

Steps:

  • Combine celery, carrot, green pepper and onion in a slow cooker. Add broth, beer, salt and pepper. Cover and cook on LOW 5 to 6 hours.
  • After 5 or 6 hours, remove vegetables with a slotted spoon and process in a blender or food processor in batches until pureed and return to cooker with broth. Turn control to HIGH. Dissolve cornstarch in water; stir into pureed mixture. Add cheese gradually, stirring until blended. Cover and cook on HIGH 15 to 20 minutes. Serve hot.

At least 1/2 cup chopped celery
1 cup all-purpose flour
2 cups chicken broth
1 (12-ounce) beer of choice (recommended: Sierra Nevada Pale Ale or Blind Pig)
7 ounces extra-sharp Cheddar, shredded
7 ounces processed Swiss cheese, shredded
2 cups half-and-half
1/2 teaspoon salt
1/2 teaspoon dry mustard
1/2 teaspoon Worcestershire sauce
1 pound smoked sausage (recommended: Otto's Smoked Polish Ring)

Steps:

  • Melt butter in a stockpot over medium heat. Add chopped onion, carrot, and celery. Saute until softened. Add flour. Cook for about 5 minutes, stirring often. Add chicken broth and beer. 5 cups russet potatoes, peeled and diced (about 2 lbs)
1 1/2 cups water
1 cup celery, chopped
1 cup leek, chopped
2 teaspoons chicken bouillon granules
8 ounces cheddar cheese, shredded
2 cups milk, warm
1 cup beer or 1 cup water, room temperature
2 teaspoons Worcestershire sauce
1 teaspoon salt
1/4 teaspoon dry mustard
1/4 teaspoon white pepper

Steps:

  • In a large saucepan over high heat, brin potatoes, 1 1/2 cups water, celery, leeks and bouillon granules to a boil.
  • Reduce heat to low, cover and simmer for 25 minutes or until potatoes are fork tender.

1/4 c water
1 c sharp cheddar cheese shredded

  • 1. Combine celery,carrot,bell pepper and onion in a slow cooker.Add chicken broth,beer and salt and pepper.Cover and cook on low for 5-6 hours.
  • 2. Remove vegetables and puree in blender.Place back in with the broth.Turn temp up to high, Dissolve cornstarch in water,stir into pureed mixture add cheese gradually,stirring until blended. Cover and cook on high for 20 minutes. Serve hot.
