  • Grill beef on an oiled rack set 5 to 6 inches over glowing coals 5 to 8 minutes on each side for medium-rare. (Alternatively, broil beef on oiled rack of a broiler pan about 3 to 5 inches from heat 6 to 7 minutes on each side for medium-rare.) Transfer beef to a cutting board and cool 30 minutes. • Arrange cucumber around edge of a platter and mound beef salad in center. Garnish beef with coriander sprig and serve with rice.

Tips:

  • For the best flavor, use high-quality beef. Look for beef that is well-marbled and has a deep red color.
  • To make sure the beef is cooked evenly, slice it against the grain.
  • Don't overcook the beef. It should be cooked to medium-rare or medium, so that it is still tender and juicy.
  • Use a sharp knife to slice the vegetables. This will help to prevent them from tearing.
  • If you don't have fish sauce, you can substitute soy sauce or tamari.
  • Adjust the amount of chili peppers to your taste. If you like it spicy, add more chili peppers. If you prefer a milder flavor, use fewer chili peppers.
  • Serve the beef salad immediately, while the beef is still warm.
