SOURDOUGH FRENCH BREAD



Sourdough French Bread image

Since receiving the recipe for the Sourdough Starter, I've made this French bread countless times. In fact, one year I donated 2 dozen loaves for a benefit dinner! These loaves rival any found in stores and can be made with relative ease. - Delila George, Junction City, Oregon

Yield 2 loaves (10 slices each).

Number Of Ingredients 10

1 package (1/4 ounce) active dry yeast
1-3/4 cups warm water (110° to 115°)
1/4 cup Sourdough Starter
2 tablespoons canola oil
2 tablespoons sugar
2 teaspoons salt
4-1/4 cups all-purpose flour
CORNSTARCH WASH:
1/2 cup water
1-1/2 teaspoons cornstarch

Steps:

  • In a large mixing bowl, dissolve yeast in warm water. Add the Sourdough Starter, oil, sugar, salt and 3 cups flour. Beat until smooth. Stir in enough additional flour to form a soft dough., Turn onto a floured surface; knead gently 20-30 times (dough will be slightly sticky). Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, 1 to 1-1/2 hours., Preheat oven to 400°. Punch dough down. Turn onto a lightly floured surface; divide in half. Roll each into a 12x8-in. rectangle. Roll up, jelly-roll style, starting with a long side; pinch ends to seal. Place seam side down on 2 greased baking sheets; tuck ends under. Cover and let rise until doubled, about 30 minutes. , With a sharp knife, make 4 shallow diagonal slashes across top of each loaf. In a small saucepan, combine water and cornstarch. Cook and stir over medium heat until thickened. Brush some over loaves. , Bake for 15 minutes. Brush loaves with remaining cornstarch wash. Bake until lightly browned, 5-10 minutes. Remove from pans to wire racks to cool.

Number Of Ingredients 8

1 1/2 tablespoons dry yeast (2 packages)
3 cups lukewarm water (85 to 105 degrees)
1/4 cup honey, molasses or brown sugar
1 cup dry milk
7 to 8 cups whole-wheat flour
4 teaspoons salt
1/3 cup oil or butter
1 egg beaten with 2 tablespoons of water, for egg wash

Steps:

  • In a large bowl, dissolve the yeast in water and stir in the honey and dry milk. Stir in 4 cups of the flour to form a thick batter and beat 100 strokes with a spoon. Let the dough rise for 45 minutes, then add the salt and oil and an additional 3 cups of the flour and knead until the dough comes away from the sides of the bowl.
  • Knead on a floured board, using about 1 cup more flour if needed to keep the dough from sticking, for about 10 minutes, until the dough is smooth. Let it rise for 50 to 60 minutes, until it is doubled in size. Punch down and let it rise again for 40 to 50 minutes, until doubled in size.
  • Shape into two round loaves and place them on a baking sheet. Let them rise for 20 to 25 minutes. Coat the top of each loaf with egg wash. Bake in a 350-degree oven for 1 hour or until golden brown.

This is a whole wheat bread that my mom has been making weekly for 25 years. This bread makes the most wonderful toast, and is super with a cup of Cocoa.

6 cups lukewarm water
2 tablespoons yeast (2 pkgs)
1 cup brown sugar or 1 cup molasses
2 cups powdered milk
4 cups whole wheat flour
2 cups white flour
3 tablespoons salt
1 cup oil
6 -8 cups white flour

Steps:

  • Step one:.
  • Mix together Water and Yeast, let rest for 5 minutes. Then add Honey,(or Brown sugar or Molasses)Powdered Milk,Whole Wheat Flour and White Flour. Beat all these ingredients together well. This batter will be thick. Once well mixed, let rise 1 hour.
  • Step Two:.
  • Fold in Salt,Oil and Flour. Use more Flour as needed to Knead bread.
  • Let Bread rise for 50 minutes, then punch down. Let rise 40 more minutes then shape into loaves. This makes approximately 5 loaves. Put loaves into greased pans.
  • Let loaves rise for 20 minutes.
  • Bake at 350 degrees for 1 hour.
  • When you remove the loaves from the oven, take a stick of Butter or Margarine and rub it over the top crust of the bread for a softer crust. Let cool in the pans for 5 minutes and remove to cooling racks.
  • Now when my mom makes this Bread, she makes half of the loaves with Cinnamon,Sugar,a little melted Butter and Raisins (my Husbands favorite) Make those loaves just like you would a Cinnamon Roll - flatten the dough out and spread the rest of the ingredients on the dough, then roll back up and put in pans.

A spectacular dessert adapted from my old Tassajara Cookbook from the 1970s. If you bake in a pie plate, make sure to use a DEEP one. In the summer, I love to take this along when a pie is requested; the custardy top makes it look extra-special and it's delicious, too. Supposedly, you can substitute 2 packages frozen peaches for the fresh peaches, but I've never done this.

1/2 cup butter
2 cups flour
1/4 teaspoon baking powder
2 tablespoons sugar
1/2 teaspoon salt
1 cup heavy cream or 1 cup sour cream
1 cup brown sugar
6 peaches, sliced
2 egg yolks, beaten
1 teaspoon cinnamon

Steps:

  • Cut the butter into the dry ingredients (flour through salt) with a fork or pastry cutter until it looks like coarse meal.
  • Press firmly into a baking pan (I use a 10-inch deep-dish pie dish).
  • Arrange the peaches on the surface to cover.
  • Sprinkle the fruit with a mixture of the cinnamon and brown sugar.
  • Bake 15 minutes at 400°.
  • Pour the egg yolks beaten with the cream over the top.
  • Lower heat to 375° and bake 40 minutes longer.

3 cups Water
2 tablespoon Yeast
2 tablespoon Sugar or honey
3.5 cup Flour (3.5 to 4.5)
1.25 tablespoon Salt
1/4 cup Oil
3 cups Flour (3 to 4)
1 cup Flour (1 to 1-1/2)

Steps:

  • Dissolve yeast in water. Stir in sweetener. Stir in flour until thick batter. Beat well 100 strokes. Let rise 60 minutes.
  • Fold in salt and oil. Fold in additional flour until dough comes away from side of bowl. Knead on floured board 10-15 minutes
  • Let rise 50 minutes. Punch down. Let rise 40 minutes.
  • Shape into loaves. Place on baking sheets sprinkled with corn mean. Let rise 20 minutes. Brush with water. Place pan of water on the bottom of the oven (or spray water in oven). Bake at 425 for 10 minutes. Remove from oven and brush with water. Continue baking at 375 until well-browned, about 40-50 minutes.
