TARRAGON CHICKEN MARINADE
I got this recipe from an old neighbor years ago...She was grilling on her deck with this chicken and it drove all of us neighbors over to find out what it was, that is how good this marinade smells. It makes a lot but you can cut it in half.

Tips:
- Choose the right chicken pieces. Bone-in, skin-on chicken thighs or breasts work best for this recipe, as they stay moist and flavorful during cooking.
- Use fresh tarragon. Fresh tarragon has a more intense flavor than dried tarragon, and it will make your marinade more aromatic.
- Make sure the chicken is well-coated in the marinade. The longer the chicken marinates, the more flavorful it will be. However, do not marinate the chicken for more than 24 hours, as the acidity of the marinade can start to break down the chicken's proteins.
- Cook the chicken over medium heat. This will help to prevent the chicken from drying out.
- Baste the chicken with the marinade while it is cooking. This will help to keep the chicken moist and flavorful.
Conclusion:
Tarragon chicken is a delicious and easy-to-make dish that is perfect for a weeknight meal. The marinade is simple to make and can be used on chicken breasts, thighs, or wings. The chicken can be cooked in a variety of ways, including grilling, baking, or pan-frying. Serve the chicken with your favorite sides, such as roasted vegetables, mashed potatoes, or rice.
