ARIZONA CHAMPAGNE MUSTARD

Arizona Champagne Mustard image

So, where in the heck's the champagne?? When it's 110 degrees in the shade, your mind can play strange tricks. I thought I'd post this as a memory of good times in Arizona. If you can't take the heat, get out of the kitchen, head for California and wonder about the champagne. Recipe from the Arizona Republic, as I recall.

TARRAGON MUSTARD

After one taste of this sharp, spicy homemade mustard, you'll find that it's worth the time to make your own. You can grind it by hand with a mortar and pestle to get a nice chunky texture, or make it in a blender being careful to use a low speed so you don't crush the seeds.

Time 45m

Yield 2 cups, 20 serving(s)

Number Of Ingredients 12

1 cup ruby port
1/4 cup red wine vinegar
1 1/2 cups mustard seeds
2 shallots, thinly sliced
3 garlic cloves, peeled
1/2 teaspoon chili powder
1/2 teaspoon ground ginger
1/2 teaspoon salt
1 tablespoon mustard oil
1/2 cup water (more if needed)
3 tablespoons olive oil
2 tablespoons chopped tarragon

Steps:

  • Combine the port, vinegar, mustard seeds, shallots and garlic in a medium saucepan and bring to a simmer over low heat. Simmer for 30 minutes, stirring occasionally. Remove from the heat and set aside to cool.
  • Transfer the mustard seed mixture to a blender and add the chili powder, ginger, salt and mustard oil. With the blender running on low speed, add 1/2 cup water and blend, adding a little more water if the mustard is too thick. Add the olive oil in a slow, steady stream until well-blended.
  • Transfer to a bowl and stir in the tarragon.
  • Store in a tightly-covered container in the refrigerator for up to one week.

Tips:

  • Using champagne or sparkling wine adds a unique flavor and effervescence to the mustard. For a non-alcoholic option, use sparkling grape juice or lemon-lime soda.
  • Fresh tarragon leaves provide a bright, anise-like flavor. If you don't have fresh tarragon, you can substitute 1 teaspoon of dried tarragon.
  • Choose high-quality mustard seeds for the best flavor. Yellow mustard seeds have a mild flavor, while brown mustard seeds have a more pungent flavor. You can also use a mix of both types of seeds.
  • The mustard will thicken as it cools. If you prefer a thinner mustard, add a little more champagne or sparkling wine.
  • Store the mustard in a jar or container with a tight-fitting lid in the refrigerator for up to 2 weeks.

Conclusion:

Tarragon and champagne mustard is a delicious and versatile condiment that can be used in a variety of dishes. It is perfect for adding a pop of flavor to sandwiches, wraps, salads, and grilled meats. It can also be used as a dipping sauce for vegetables or pretzels. With its bright, herbaceous flavor and effervescent texture, tarragon and champagne mustard is sure to be a hit at your next gathering.
