FISH EYE SALAD (TAPIOCA FRUIT SALAD)

Fish Eye Salad (tapioca Fruit Salad) image

This recipe is from my Mother in Law. My brother in law told my kids not to eat grandma's salad because it was made with fish eyes!! It took them a while to convince them that there were no fish eyes in the salad and now they love this treat. They even request it by asking for the Fish Eye Salad--hence the name! Prep time does not include the overnight soaking of the tapioca

Yield 8 serving(s)

Number Of Ingredients 15

1 1/2 cups coconut milk
1 cup milk
3/4 cup sugar, divided
2 eggs, beaten
1/4 cup water
3 tablespoons quick-cooking tapioca
1/2 teaspoon vanilla
1 pinch salt
2 cups fresh pineapple, chunks
2 cups fresh strawberries, quartered
1 cup mango, diced
1 cup fresh blueberries
1 cup fresh blackberries
1 lime peel, grated
2 tablespoons lime juice

Steps:

  • Mix coconut milk, milk, 1/2 cup sugar, eggs, water, tapioca, vanilla and salt in medium saucepan. Let stand 5 minutes. Cook over medium heat, stirring, until full boil. Remove from heat. Cool 30 minutes. (Pudding thickens as it cools.).
  • Spoon into individual dessert bowls. Combine pineapple, strawberries, mango, blueberries and blackberries in large bowl. Stir in remaining 1/4 cup sugar, lime peel and juice; mix well. Spoon over tapioca.
  • Cover; refrigerate 2 to 3 hours before serving.

Tips:

  • Select ripe and fresh fruits: Using ripe and fresh fruits will enhance the flavor and texture of your fruit salad. Look for fruits that are brightly colored, firm, and free from blemishes.
  • Prepare the fruits properly: Before adding the fruits to the salad, wash them thoroughly to remove any dirt or debris. Cut the fruits into bite-sized pieces to ensure even distribution and easier eating.
  • Use high-quality tapioca pearls: The quality of tapioca pearls can greatly impact the texture and flavor of your fruit salad. Opt for high-quality tapioca pearls that are made from pure starch and have a consistent size and shape.
  • Cook the tapioca pearls according to the package instructions: Different brands of tapioca pearls may have slightly different cooking times, so it's essential to follow the instructions provided on the package. Cooking the tapioca pearls properly will ensure that they are cooked through and have a chewy texture.
  • Sweeten the tapioca pearls to your preference: The sweetness of the tapioca pearls can be adjusted based on your taste preferences. You can add sugar or honey while cooking the tapioca pearls or mix them with a flavored syrup after they are cooked.
  • Chill the fruit salad before serving: Chilling the fruit salad before serving allows the flavors to blend and enhances the refreshing taste. You can chill the fruit salad for at least 30 minutes or up to overnight for a more pronounced flavor.
