6 1/4 cups water
1 cup (1/8-inch) pearl tapioca (not quick-cooking)
1 pandan leaf, thawed if frozen (optional)
1/2 cup grated or crumbled dark palm sugar (4 oz) or packed dark brown sugar
1 (14-oz) can unsweetened coconut milk (do not shake)

Steps:

  • Bring 6 cups water to a boil in a large saucepan and add tapioca in a slow stream, stirring constantly. Gently boil, stirring frequently, 5 minutes.
  • Remove from heat and let stand, covered, until tapioca is translucent, about 15 minutes.

AUNTIE LISA'S SUAFA'I (SAMOAN TAPIOCA PUDDING W/BANANAS AND COCONUT CREAM) RECIPE - (4.2/5)

Auntie Lisa's suafa'i (Samoan tapioca pudding w/bananas and coconut cream) Recipe - (4.2/5) image

Provided by á-39535

Number Of Ingredients 7

8 bananas
4 cups water
1/2 cup tapioca
1 cup coconut milk
1/4 cup sugar
The sugar is optional but I do recommend it. Make sure you pull the inner strings off the bananas before boiling! The riper the banana the stronger the banana flavor.
Our family's personal taste is to use an entire can of purchased coconut milk and reduce the water accordingly. Or if using homemade coconut milk to reduce the water by a half a cup and increase the coconut milk a half a cup.

Steps:

  • Peel the bananas and place in a medium saucepan. Add the water and then bring to the boil. Turn the heat down and simmer for about 20 minutes. Break the bananas up with a wooden spoon, fork or masher. Sprinkle the tapioca into the saucepan while stirring. Add the coconut milk and then simmer over low/medium heat until the tapioca is cooked, about 15 minutes. Stir frequently. Finally, taste the suafa'i. If you like a little more sweetness, then add sugar to taste. Remove from the heat, leave for about 30 minutes to cool and then serve in a bowl or cup. You can also cool suafa'i completely, and refrigerate it. Once cooled, serve it as a snack or dessert.

TAPIOCA CREAM CHEESE PUDDING

Tapioca Cream Cheese Pudding image

I whipped this recipe together the other day when I finally got tired of buying ready-made tapioca pudding! Maybe one day I'll actually try it from scratch (if only I can find a really good outlet for scratch)! Pudding servings are usually set at 1/2 cup, but mine are considerably larger than that! This pudding is thick enough that I have even used it as a nice filling for a 3-layer cake!

Categories     Dessert

Time 45m

Yield 6 serving(s)

Number Of Ingredients 4

4 cups nonfat milk
2 (3 ounce) packages tapioca pudding (cook & serve, fat-free)
1 (8 ounce) package neufchatel cheese, room temperature (or other low-fat cream cheese)
1 cup chocolate chips (optional)

Steps:

  • In a large sauce pan stir together the milk & pudding mix, then cook over a medium to medium-high heat, stirring constantly, for about 25 minutes, or until the mixture comes to a full boil.
  • Remove from heat & let cool 5 minutes, then stir well.
  • Let cool another 5 minutes & again stir well.
  • Let cool another 5 minutes & stir in the cheese.
  • Pour into a bowl, cover the surface of the pudding with plastic wrap & let set for about an hour.
  • If the chocolate chips are to be included, quickly stir them in, then again cover the pudding with plastic wrap & let it cool completely ~ OR enjoy it slightly warm!

Tips:

  • Use fresh tapioca pearls for the best texture and flavor.
  • Soak the tapioca pearls in water for at least 30 minutes before cooking. This will help them to cook evenly.
  • Cook the tapioca pearls in plenty of water. The ratio of water to tapioca pearls should be at least 4:1.
  • Bring the water to a boil, then reduce the heat to low and simmer for 15-20 minutes, or until the tapioca pearls are translucent.
  • Drain the tapioca pearls and rinse them with cold water.
  • Sweeten the tapioca pearls with sugar, honey, or maple syrup to taste.
  • Add your favorite toppings, such as fruit, nuts, or whipped cream.

Conclusion:

Tapioca cream is a delicious and versatile dessert that can be enjoyed on its own or as a topping for other desserts. It is a great way to use up leftover tapioca pearls, and it is also a good option for people who are looking for a gluten-free dessert. With so many variations to choose from, there is sure to be a tapioca cream recipe that everyone will enjoy.
