1 1/2 cups basmati rice
3 tablespoons vegetable oil
1 onion, chopped
2 garlic cloves, crushed
3 cups vegetable stock or 3 cups water
4 ounces sweet corn (2/3 cup)
1/2 red bell peppers or 1/2 green bell pepper, chopped
1 large carrot, grated

Steps:

  • Wash the rice in a sieve under cold water, then leave to drain about 15 minutes.
  • Heat the oil in a large saucepan and fry the onion for a few minutes over a moderate heat until soft.
  • Add the rice and stir-fry for about 10 minutes, taking care to keep stirring all the time so that the rice doesn't stick to the pan.
  • Add the garlic and the stock or water and stir well. Bring to the boil and cook over a high heat for 5 minutes, then reduce the heat, cover and cook the rice for 20 minutes.
  • Scatter the corn over the rice, then spread the pepper on top and lastly sprinkle over the grated carrot.
  • Cover tightly and steam over a low heat until the rice is cooked, then mix together with a fork and serve immediately.

2 tablespoons butter or ghee
1 onion (finely diced)
1 clove garlic (finely diced)
5 cardamom pods
1 to 2 whole cinnamon sticks
1/2 teaspoon ground cumin
1 teaspoon of black pepper
1/2 teaspoon ground cloves
2 cups basmati rice (rinsed to remove excess starch)
1 cup coconut milk
2 cups vegetable stock or boiling water

Steps:

  • Gather the ingredients.
  • In a heavy pot, heat the butter or ghee over medium heat and fry the onions until golden.
  • Add the rice to the pot and stir until coated with the fat. Add the garlic and spices to the pot and and stir, allowing the spices to release their fragrance (about a minute).
  • Stir in the coconut milk and vegetable stock or water, and bring to a boil.
  • After 5 minutes, reduce the heat to low, cover firmly with a lid and allow the rice to cook for 15 minutes.

3 c whole-grain rice (cooked)
1 can(s) kidney beans, canned
1/8 c coconut milk, unsweetened
1 can(s) sweetcorn
1 tsp curry powder (mild)
1 tsp cinnamon (powder) (or 2 sticks)

  • 1. Use left-over rice, or cook the rice using the instructions on the pack (mine takes 1 cup rice, 2.5 cups water, 1 hour, stir occasionally)
