TANGY TEXAS SALSA

I'm a "transplant" from Wisconsin currently living in Texas. Even after 20 years, I can't get enough of our wonderful local citrus. This is one way to work it into a main dish. The combination of tangy fruit, spicy jalapeno and distinctive cilantro is perfect over any meat, poultry or fish. We also dip into it with chips. -Lois Kildahl, McAllen, Texas

ZESTY SALSA FOR CANNING

Zesty Salsa for Canning image

I got this years ago from the lady in our church who canned it. I've never made it but I've eaten lots of it! It's the best salsa I have ever had. Especially good with lime tortilla chips or on taco salad (recipe #102234).

Time 1h

Yield 6 pints

Number Of Ingredients 9

10 cups roughly chopped tomatoes
5 cups chopped and seeded bell peppers
5 cups chopped onions
2 1/2 cups hot peppers, chopped, seeded
1 1/4 cups cider vinegar
3 garlic cloves, minced
2 tablespoons cilantro, minced
3 teaspoons salt
1 (6 ounce) can tomato paste

Steps:

  • Combine all ingredients except tomato paste in large sauce pot.
  • Simmer until desired thickness.
  • Stir in tomato paste.
  • Ladle hot salsa into hot jars leaving 1/4 inch head-space.
  • Process 15 minutes in a hot water bath.
  • Note: use more hot peppers for a very hot salsa or less for mild.
  • It depends on how hot your peppers are and how hot you like your salsa.
  • I never get close to 2 1/2 cups for our mild salsa.

Tips:

  • Use ripe tomatoes: The riper the tomatoes, the sweeter and more flavorful your salsa will be.
  • Choose the right type of tomatoes: Roma tomatoes are a good choice for salsa because they are meaty and have fewer seeds.
  • Roast your tomatoes: Roasting tomatoes intensifies their flavor and gives them a smoky taste.
  • Use fresh herbs: Fresh herbs, such as cilantro and basil, add a lot of flavor to salsa.
  • Don't over-blend your salsa: You want your salsa to have some texture, so don't blend it until it's completely smooth.
  • Taste your salsa as you go: Adjust the seasonings to your liking.
  • Let your salsa chill before serving: This allows the flavors to meld together.

Conclusion:

This tangy Texas salsa is the perfect addition to any Mexican dish. It's also great for snacking on with chips or vegetables. With a few simple ingredients and a little bit of time, you can make this delicious salsa at home. So next time you're looking for a flavorful and easy-to-make salsa, give this recipe a try!
