Categories     Main Course

Time 8h20m

Number Of Ingredients 21

2 - 3 Tbsp packed light brown sugar
2 1/2 tsp paprika
2 tsp garlic powder
2 tsp onion powder
1 1/2 tsp kosher salt
1 tsp black pepper
4 lb beef chuck roast
2 Tbsp yellow mustard
2/3 cup beef broth
1 tsp liquid smoke ((optional))
3 - 4 Tbsp unsalted butter ((sliced))
1 large yellow onion, finely minced
4 cloves garlic, minced
3 Tbsp butter
1 tsp olive oil
salt and pepper, to taste
20 - 24 oz bottle of ketchup
1/3 - 1/2 cup packed light brown sugar
1/4 cup apple cider vinegar
2 - 3 Tbsp molasses
1/2 tsp Worcestershire sauce

Steps:

  • Combine brown sugar, paprika, garlic powder, onion powder, salt and pepper in a small bowl. Set aside. Add chuck roast to slow cooker, drizzle with mustard and rub into the meat.
  • Sprinkle with half of the rub. Rub into the meat, flip the roast over and rub the remaining rub into the meat. Pour in beef broth and liquid smoke (if using), being careful to pour it around the roast, not over it. You don't want to wash away that rub and mustard! Top with butter slices. Cover and cook on LOW for 8-10 hours, or until roast is fork tender.
  • Remove roast from slow cooker to a large cutting board and shred, discarding large fat pieces. Drain cooking juices from the slow cooker and return shredded beef to the slow cooker.

ELAINE'S SWEET AND TANGY LOOSE BEEF BBQ

Elaine's Sweet and Tangy Loose Beef BBQ image

This recipe is a fly-by-the-seat-of-your-pants creation. I researched several BBQ recipes online and in my cookbooks and combined bits and pieces of different things I liked about them. The result was a wonderful and tangy loose BBQ for sandwiches that is very easy to make and takes little hands-on time. My in-laws who are in their 70s both said it was the best BBQ they had ever had. It was awesome!

Tips:

  • Choose the right cut of beef: Chuck roast or brisket are ideal for this recipe as they are tough cuts that become tender when cooked low and slow.
  • Use a good quality barbecue sauce: The sauce is a key component of this recipe, so choose one that you enjoy the taste of. You can use a store-bought sauce or make your own.
  • Cook the beef low and slow: This will allow the connective tissue to break down and the beef to become tender. You can cook the beef in a slow cooker, a Dutch oven in the oven, or on a grill.
  • Shred the beef against the grain: This will make it easier to eat and will help the sauce to coat the beef evenly.
  • Serve the beef with your favorite sides: Some popular options include mashed potatoes, coleslaw, and corn on the cob.

Tangy Sweet Shredded Beef Barbecue is a delicious and easy-to-make recipe that is perfect for any occasion. The beef is cooked low and slow until it is fall-apart tender, and then it is shredded and coated in a tangy and sweet barbecue sauce.
