MANGO SLAW

Mango Slaw image

There is absolutely nothing new about coleslaw, but there is something slightly intriguing about coleslaw with mangos. Often, when we think of coleslaw, we think of it as a side for fish and chips, barbecue, or heavy, mayonnaise-drenched cabbage. But just think about the cool, crunchy sweetness of the cabbage, carrots and mango, paired with the spicy kick of jerk chicken. What's a better combination? You also don't have to serve it as a side: It can be tucked into a sandwich or wrap. One of the best things about this recipe is that all the ingredients are readily available, and there are many shortcuts you can take, like using a bagged mix. Who wants to ruin their knuckles on a box grater, or break out the food processor?

Tips:

  • Use ripe mangoes: To ensure a sweet and flavorful slaw, choose ripe mangoes that are slightly soft to the touch and have a vibrant yellow color.
  • Prepare the mangoes properly: Peel and cut the mangoes into thin matchsticks or julienne strips for a crispy and refreshing texture.
  • Choose the right cabbage: For a crunchy and slightly tangy slaw, use green cabbage. For a milder flavor and softer texture, opt for red cabbage.
  • Shred the cabbage finely: Finely shredding the cabbage will help it absorb the dressing better and create a cohesive slaw.
  • Make a flavorful dressing: To balance the sweetness of the mangoes and the tanginess of the cabbage, use a dressing made with a combination of lime juice, vinegar, oil, and honey.
  • Add some crunch: For an extra layer of texture, add some chopped nuts, seeds, or crispy wonton strips to the slaw.
  • Chill before serving: To allow the flavors to meld and develop, chill the slaw in the refrigerator for at least 30 minutes before serving.
