½ cup butter
1 cup white sugar
1 egg
1 egg yolk
1 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
¼ cup fresh lime juice
1 ½ teaspoons grated lime zest
½ cup confectioners' sugar for decoration

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large bowl, cream butter, sugar, egg, and egg yolk until smooth. Stir in lime juice and lime zest. Combine the flour, baking powder, and salt; blend into the creamed mixture. Form dough into 1/2 inch balls, and arrange on the prepared cookie sheet.

2 tablespoons unsalted butter, at room temperature (plus more for greasing the ramekins)
2 large eggs
1 cup sugar
4 limes, juiced and zested
1/3 cup flour
1 teaspoon baking powder
1 pinch salt
2/3 cup low-fat milk

Steps:

  • Preheat oven to 350 degrees F. Lightly grease four 1 cup ramekins with butter.
  • Separate egg yolks from whites. Beat egg whites until soft peaks form; set aside.
  • Combine 2 tablespoons butter, sugar, egg yolks, and l tablespoon lime zest. Beat on medium speed until creamy and light, about 4 minutes. Using a wooden spoon fold in flour, baking powder, salt, milk and 1/2 cup lime juice into the sugar and egg mixture. Combine well. Gently fold in the egg whites, 1/3 at a time.

1/3 cup sugar
2 tablespoons lime juice
1 tablespoon lime zest
2 egg yolks
1 drop green food coloring, if desired
1/2 cup butter, softened
1/4 cup sugar
1 egg yolk
1 teaspoon vanilla
1 1/4 cups flour
1/4 teaspoon salt
powdered sugar (to garnish)

Steps:

  • Combine all the filling ingredients except the food coloring in a two quart saucepan.
  • Whisk to combine.
  • Cook over low heat stirring constantly until mixture begins to thicken, about 3 to 4 minutes.
  • Do Not Boil.
  • Remove from heat.
  • Stir in food coloring if desired.
  • Set aside to cool.
  • Heat Oven to 325.
  • Combine butter, 1/4 cup sugar, egg yolk, and vanilla in a large mixer bowl.
  • Beat at medium speed, scraping bowl often,until well mixed, about 1 to 2 minutes.

  • Make indentation in center of each cookie with thumb or back of teaspoon.
  • Spoon 1/2 teaspoon of filling into each cookie indention.
  • Bake for 12 to 15 minutes or until set but not brown.
  • Let stand for one minute.
  • Remove from cookie sheets.
  • Cool completely.
  • Sprinkle with confectioners' sugar.
