Time 1h40m

Yield 4

Number Of Ingredients 13

1 (8 ounce) can pineapple tidbits with juice
1 cup soy sauce
1 teaspoon onion powder
2 tablespoons white sugar
¼ cup lemon juice
2 tablespoons barbeque sauce
½ teaspoon curry powder
4 boneless, skinless chicken breast halves
salt and pepper to taste
½ cup finely chopped onion
½ cup finely chopped celery
2 ½ cups uncooked white rice
4 cups water

Steps:

  • In a glass or plastic dish with a lid, combine the pineapple with its juice, soy sauce, onion powder, sugar, lemon juice, barbeque sauce, and curry powder. Taste, and adjust seasonings if desired. Place the chicken into the mixture, cover, and refrigerate for 1 to 2 hours.
  • Preheat an outdoor grill for medium-high heat. Place chicken breasts onto the grate, and grill until the meat is no longer pink inside. Brush occasionally with the pineapple sauce. Chicken should take about 7 to 10 minutes on each side.

  • Serve the chicken on a bed of rice with the sauce covering it, or to the side.

HAWAIIAN-STYLE SAUSAGE AND RICE

Hawaiian-Style Sausage and Rice image

I used to work where we had a lot of potluck lunches. I just brought the ingredients, already prepared, a rice cooker, and an electric frying pan. I would start the rice about 20 minutes before lunch and cook the rest in the frying pan while everyone else was uncovering and setting out their dishes. My copy of the recipe is getting so tattered I felt I better archive it. I would sorely miss it if lost.

1 cup diagonally sliced celery, 1 inch thick
1 (14 ounce) can whole peeled tomatoes, quartered

PINEAPPLE RICE

Pineapple Rice image

Tropical, sweet, savory, spicy, and absolutely delicious. That's what this pineapple rice is all about. It's the best combo of sweet and spicy!

Provided by Katya

Categories     Side

Time 25m

Number Of Ingredients 9

1 1/2 cups water
1 (8 oz.) can crushed pineapple in pineapple juice (1 cup)
2 tsp. sugar
1 Tbsp. unsalted butter
1/2 tsp. kosher salt
1/4 - 1/2 tsp. red pepper flakes
1 cup basmati or jasmine rice, not quick-cooking
Juice 1/2 lime (about 1 Tbsp.)
Fresh cilantro, chopped

Steps:

  • In a small saucepan, combine water, pineapple, sugar, butter, salt, and red pepper flakes. Cover and bring to a simmer over medium heat. Stir in rice and bring back to a simmer. Reduce heat to low, and simmer, partially covered for 15 minutes or until all of the water is absorbed. The rice will be almost done with a slight bite to it.
  • Remove the saucepan from heat and let the rice steam another 5 minutes, covered. Fluff rice with a fork. Stir in lime juice and chopped cilantro. (I love cilantro so I usually go heavy but you can add as much as you like).

Tips:

  • Use fresh pineapple. Fresh pineapple is sweeter and juicier than canned pineapple, and it will give your rice a more authentic Hawaiian flavor.
  • Don't overcook the rice. Overcooked rice will be mushy and unpleasant to eat. Cook the rice according to the package directions, or until it is tender but still slightly firm.
  • Use a good quality soy sauce. A good quality soy sauce will have a rich, umami flavor that will enhance the taste of the rice.
  • Don't be afraid to experiment. There are many different ways to make tangy Hawaiian rice. Feel free to add other ingredients that you think would taste good, such as vegetables, fruits, or nuts.

Conclusion:

Tangy Hawaiian rice is a delicious and easy-to-make dish that is perfect for any occasion. It is a great way to use up leftover rice, and it is also a healthy and affordable meal. With its sweet, tangy, and savory flavors, tangy Hawaiian rice is sure to be a hit with everyone who tries it.
