Number Of Ingredients 11

3 boneless, skinless chicken breasts (cubed)
1 onion (thinly sliced)
1 green bell pepper (thinly sliced)
1/4 cup white distilled vinegar
1/2 cup lime juice
2 (0.7 ounce) pkg. dry Italian-style salad dressing mix
2 Tablespoons olive oil
12 flour tortillas
Sour cream - optional topping
Cilantro - optional topping
Salsa - optional topping

Steps:

  • Place cubed chicken, sliced onion and sliced green pepper in a gallon-sized resealable bag.
  • In a mixing bowl, whisk together vinegar, lime juice and salad dressing mix.
  • Pour over chicken and vegetables and seal bag.
  • Refrigerate for at least 3 hours.
  • After chicken and vegetables have marinated, heat olive oil in a skillet over medium heat and saute until vegetables are soft and chicken is cooked through. Serve chicken and vegetables in tortillas and top with sour cream, cilantro and salsa.

These are something my family used to make at least once a week. It cracks me up that we use Italian dressing as a marinade in this Mexican recipe. The result is a fajita with a kick. This is also good as a filling for quesadillas.

3 -4 skinless chicken, boneless chicken breasts
cayenne pepper, to taste
Italian dressing, enough to cover chicken
2 bell peppers
1 red onion
oil
6 -8 tortillas
shredded cheese
sour cream

  • Slice and marinate the chicken and vegetables in the Italian dressing 20-30 minutes.
  • Heat the oil in a pan.

½ cup distilled white vinegar
½ cup fresh lime juice
2 (.7 ounce) packages dry Italian-style salad dressing mix
3 whole boneless, skinless chicken breast, cubed
1 onion, sliced

  • In a large glass bowl combine the oil, vinegar, lime juice, and dry salad dressing mix. Mix together. Add chicken strips, onion and bell pepper. Cover dish and refrigerate. Marinate for 3 to 6 hours.
