Categories     Muffins

Time 35m

Number Of Ingredients 11

2 c flour
1/2 c sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 (8 oz.) carton vanilla yogurt
1 egg, lightly beaten
1/4 c butter, melted
2 Tbsp milk
1 c diced, peeled tangerine
1 Tbsp grated tangerine peel

Steps:

  • 1. In a bowl, combine the first 5 ingredients.
  • 2. In a small bowl, combine the yogurt, egg, butter, and milk until smooth; stir into dry ingredients just until moistened.
  • 3. Stir in tangerine and peel.
  • 4. Fill greased or paper-lined muffin cups two-thirds full.
  • 5. Bake at 400 degrees for 18-20 minutes.
  • 6. Cool for 5 minutes before removing from pan to wire rack.

Tips:

  • Choose the right tangerines: Use ripe, juicy tangerines for the best flavor. Clementines or Satsumas are also good options.
  • Zest the tangerines before juicing: This will release the aromatic oils from the peel and give your muffins a more intense flavor.
  • Don't overmix the batter: Overmixing can make the muffins tough. Mix just until the ingredients are combined.
  • Fill the muffin cups only 2/3 full: This will prevent them from overflowing in the oven.
  • Bake the muffins until a toothpick inserted into the center comes out clean: This usually takes about 20-25 minutes.
  • Let the muffins cool completely before serving: This will allow the flavors to develop and the muffins to set.

Conclusion:

These tangerine muffins are a delicious and easy-to-make treat that are perfect for breakfast, lunch, or a snack. They are also a great way to use up leftover tangerines. With their bright citrus flavor and moist, fluffy texture, these muffins are sure to be a hit with everyone who tries them.
