TANGERINE SORBET WITH SAKE

Tangerine Sorbet With Sake image

Even people who don't want dessert can manage a bowl of fruit sorbet. This one is exceedingly easy, and makes a perfect ending to any meal. Made with fresh tangerine juice and a small amount sugar, the sorbet mixture needs a bit of alcohol to keep it from freezing solid. A little sake does the trick here, while a splash of sake at serving time adds interest. If you're not a fan of sake, use flavorless vodka in the base, and a citrus-infused vodka or citrus liqueur to finish. The alcohol gives the sorbet a softer consistency, but you can omit it if you wish.

Yield Makes 10 to 12 servings (about 1 1/2 qt)

Number Of Ingredients 8

1 pound fresh or frozen cranberries (4 cups; thawed if frozen)
5 cups water
2 1/2 cups sugar
3/4 cup fresh lemon juice
1/3 cup fresh orange juice
Garnish: fresh mint sprigs
Special Equipment
an ice cream maker

Steps:

  • Boil cranberries, 2 cups water, and 1/2 cup sugar in a 5- to 6-quart heavy pot, stirring occasionally, until cranberries have burst, about 15 minutes.
  • Purée cranberry mixture in batches in a blender until as smooth as possible (use caution when blending hot liquids). Force through a medium-mesh sieve into a bowl, discarding solids, and chill, covered with plastic wrap, until cold, about 2 hours.
  • Bring remaining 3 cups water and remaining 2 cups sugar to a boil in a 2-quart saucepan, stirring until sugar is dissolved, then remove from heat and cool syrup 30 minutes.
  • Stir together cranberry purée, sugar syrup, and citrus juices and freeze in ice cream maker. Transfer to an airtight container and freeze until hardened, at least 2 hours.

Tips:

  • Utilize ripe tangerines and cranberries: The flavor of your sorbet will be greatly influenced by the quality of your ingredients. Use ripe, juicy tangerines and fresh, tart cranberries for the best results.
  • Chill your ingredients: Before starting the sorbet-making process, ensure that your tangerines, cranberries, and simple syrup are chilled. This will help the sorbet freeze more evenly and prevent it from becoming icy.
  • Don't over-process the sorbet: Over-processing the sorbet can result in a grainy texture. Pulse the mixture in a food processor or blender just until it is smooth, with some small pieces of fruit still visible.
  • Freeze the sorbet in a covered container: Once the sorbet has been churned, transfer it to a covered container and freeze it for at least 4 hours or overnight. This will allow the sorbet to set and develop its full flavor.
  • Enjoy the sorbet immediately or store it in the freezer: Tangerine Cranberry Sorbet is best enjoyed fresh, but it can also be stored in the freezer for up to 2 weeks. When ready to serve, allow the sorbet to soften slightly at room temperature for a few minutes before scooping.

Conclusion:

Tangerine Cranberry Sorbet is a refreshing, flavorful, and healthy treat that is perfect for any occasion. It is a great way to use up fresh tangerines and cranberries, and it is also a delicious and nutritious snack or dessert. With its vibrant color and tangy flavor, this sorbet is sure to be a hit with everyone who tries it.
