Yield 6

Number Of Ingredients 11

2 cups packed cilantro leaves, fresh
1 cup packed mint leaves, fresh
4 thai green chilis
1 tablespoon ginger root, peeled and chopped
¼ cup lemon juice, fresh (about 2 large lemons)
1 teaspoon brown sugar
½ teaspoon black pepper, freshly ground
½ cup water
2 lbs jumbo shrimp, peeled and deveined with tail on
2 tablespoons olive oil
1 large lemon, fresh

Steps:

  • In a food processor, pulse all the ingredients from the cilantro to the water to make a smooth chutney. Adjust the taste with additional salt and pepper if desired. Store the chutney in an airtight container in the refrigerator for up to a week.
  • Pat the shrimp dry with a clean towel and add half of the cilantro mint chutney along with the olive oil. Mix and refrigerate in a covered container for at least 30 mins.
  • Preheat a grill. Skewer the shrimp and grill them on the hot grill for 2-3 minutes on each side. Baste as needed with the leftover marinade from the chutney. Yield Makes 6 servings

Number Of Ingredients 9

1 cup plain yogurt
1 bunch cilantro, stems removed
6 garlic cloves, peeled
1 3-inch piece fresh ginger, peeled and cut into chunks
1/2 medium onion, peeled and cut into chunks
3 tablespoons garam masala
Juice of 3 large limes
Salt and pepper to taste
2 pounds lamb chops, chicken breasts (cut into 1-inch pieces), or shrimp (peeled and deveined)

Steps:

  • 1 In a blender, puree the first 8 ingredients until they form a paste.
  • 2 In a large bowl, toss your protein with the marinade. Chill for at least 4 hours or overnight.
  • 3 When ready to cook, heat the grill and shake any excess marinade from the protein. Grill 9 minutes for chops, 6 to 8 minutes a side on a covered grill for chicken, or 4 minutes a side for shrimp. Serve.

Tips:

  • Choose fresh, large shrimp. This will ensure that they are juicy and flavorful.
  • Marinate the shrimp for at least 30 minutes, or up to overnight. This will allow the flavors to penetrate the shrimp and make them even more delicious.
  • Use a hot grill or pan to cook the shrimp. This will help to create a nice char and prevent them from becoming overcooked.
  • Don't overcrowd the grill or pan. This will prevent the shrimp from cooking evenly.
  • Cook the shrimp until they are just opaque and cooked through. Overcooked shrimp will be tough and rubbery.
  • Serve the shrimp immediately with mint-cilantro chutney. This chutney is the perfect complement to the spicy shrimp.

Conclusion:

Tandoori spiced grilled shrimp with mint-cilantro chutney is a delicious and easy-to-make dish that is perfect for any occasion. The shrimp are marinated in a flavorful yogurt-based marinade and then grilled until they are cooked through. The mint-cilantro chutney is a refreshing and tangy accompaniment to the shrimp.
