¾ cup tamarind purée
¼ cup fish sauce
2 Tbsp. light or dark brown sugar
1 Tbsp. crushed red pepper flakes
1 tsp. ground cumin
3 tsp. Diamond Crystal or 1½ tsp. Morton kosher salt, divided
4 lb. chicken wings, drumettes and flats separated if desired
¼ small red onion, very thinly sliced, preferably on a mandoline
Cilantro leaves with tender stems and lime wedges (for serving)

Steps:

  • Whisk tamarind purée, fish sauce, brown sugar, red pepper flakes, cumin, and 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt in a medium bowl until combined and a loose paste forms. Set tamarind glaze aside.
  • Pat wings dry with paper towels, then season all over with remaining 2 tsp. Diamond Crystal or 1 tsp. Morton kosher salt. Place in a large bowl; add half of tamarind glaze and toss to coat. Chill 15 minutes. Set remaining glaze aside.
  • Meanwhile, place onion in a bowl of ice water and set aside.
  • Prepare a grill for medium indirect heat (for a charcoal grill, bank coals on one side of grill; for a gas grill, leave one or two burners off). Arrange wings on grate over indirect heat, making sure not to overcrowd. Brush top of each wing with some reserved glaze. Cover and grill 15 minutes. Uncover, turn wings over, and brush other side with glaze. Re-cover and grill until wings are golden brown and a thermometer inserted into the thickest part of a wing registers 165°F, about 15 minutes.
  • Brush wings with more glaze, then move over direct heat and grill until charred in spots, 1-2 minutes per side.
  • Transfer wings to a platter. Drain onion and place on paper towels; pat dry. Scatter onion over wings and top with cilantro. Serve with lime wedges for squeezing over.

Here is another excellent recipe of Vikram Vij from his restaurant Vij's in Vancouver. Lots of flavor but very simple to make. I post it as it is originally, but I did cut down on the salt. The recipe said 1 1/2 tablespoon of salt! I think it was a mistake. I have after making it twice cut it down to 1 1/2 teaspoon. Feel free to use more. 3/4 cup plain yogurt
1 tablespoon tamarind paste (Asian supermarket)
3 tablespoons garlic, finely chopped
1/4 cup canola oil
1 1/2 teaspoons salt (or to taste, see intro)

1 tablespoon garam masala or 1 tablespoon ground cumin
2 1/4 lbs boneless chicken thighs, approx 6 oz per serving

Steps:

  • In a large mixing bowl combine the yogurt, tamarind, garlic, canola, salt, cayenne and garam massala.
  • Add the chicken, mix and make sure the chicken is covered with the marinade.
  • Cover and marinate for a minimum of 4 hours but 8 is prefered.
  • Preheat a grill, barbeque or stovetop cast-iron grill to high heat(if doing this indoors make sure you switch on your exhaust fan,there will be smoke whilst grilling on the high heat. (doing this in a pan does not work for me, it makes a mess and does not brown so well, grill or barbeque gave me a better result).
  • Grill the thighs 2 minutes on each side, then again 2 minutes on each side.
  • Check or the thighs are done, if still pink continue grilling.
  • Serve with the lemon wedges.
  • Note: Tamarind paste should be as thick as jam, if thinner use up to 1 tablespoon more.

9 ounces pad Thai rice noodles
3/4 lb boneless chicken thighs, cut into small strips (or breast)
1 1/2 tablespoons soy sauce
4 garlic cloves, minced
ginger, grated (thumb size)
4 green onions, sliced
1 egg
2 -3 cups bean sprouts
1/3 cup dry-roasted unsalted peanuts, roughly chopped (or cashews)
1 fresh lime, sliced into wedges
2 tablespoons vegetable oil
1/3 cup chicken stock (good-tasting)
3 tablespoons rice vinegar (or substitute white vinegar)
1 tablespoon lime juice
3 -4 tablespoons brown sugar
2 tablespoons fish sauce
1 tablespoon soy sauce
1/8 teaspoon white pepper

Steps:

  • Place prepared chicken in a bowl and toss with 1.5 tablespoons soy sauce. Set aside.
  • Combine 'pad Thai sauce' ingredients together in a cup, stirring well to dissolve sugar. Note that this sauce needs to taste sweet first, followed by sour and then salty to create good pad Thai. Set aside.
  • Bring a large pot of water to boil. Dunk in rice noodles and switch off heat. Allow noodles to soak approximately 6 minutes, OR until soft enough to bend easily, but still firm and 'undercooked' by regular standards (this is the key to good pad Thai, so be sure not to over-soak or boil the noodles. They will finish cooking later). Drain and rinse noodles briefly with cold water to keep from sticking. Set aside.
  • Heat a wok or large frying pan over medium-high heat. Drizzle in the oil and swirl around, then add the garlic, chili, galangal/ginger, and half of green onion (or just the white parts), reserving remaining for later. Stir-fry 1 minute to release the fragrance.
  • Add chicken and stir-fry 3-4 minutes, or until cooked. If pan becomes dry, add 1-2 tablespoons of the pad Thai sauce, just enough to keep ingredients frying nicely.
  • Push ingredients aside and crack egg into center of pan. Stir quickly to scramble, then combine with other ingredients.
  • Add prepared noodles plus 3-4 tablespoons of the pad Thai sauce. Using two utensils, lift and turn noodles to stir-fry and combine with other ingredients. Continue frying in this way, adding more of the sauce every minute or two, until all sauce has been added and the noodles are chewy-delicious and a little bit sticky (8-10 minutes). When sauce has been absorbed and noodles are cooked, fold in the bean sprouts (you want them to stay crispy).
  • Remove from heat and taste-test, adding more fish sauce until desired taste is achieved (I usually end up adding 1-2 tablespoons fish sauce, but I like mine on the salty side). Portion out onto individual plates and add a lime wedge on the side. Before eating, top with remaining green onion and squeeze over the lime wedge, then finish with a generous sprinkling of chopped/ground nuts. For those whole like it extra spicy, serve with Thai chili sauce on the side, and ENJOY!
  • *Note about Tamarind: Although today we associate pad Thai sauce with tamarind, in this authentic southern-Thai recipe, the sourness comes from a combination of rice vinegar and lime juice instead. Traditionally (several hundred years ago), pad Thai was made in just this way - without tamarind - and versions of this original formula can still be found in various regions of Thailand. This particular recipe was taught to me by a local Thai chef in south-western Phuket, Thailand.
  • *Use wheat-free soy sauce for gluten-free diets.

Feel free to make this if you think you might like it, or maybe make some adjustments to it, but I made it as it is posted and I didn't like it. I love agua de tamarindo so I thought this might be good, but turned out not to be what I thought. Just FYI!

1 lb chicken wings
4 -6 shallots
4 tablespoons tamarind juice (or 2 tbsp tamarind concentrate diluted with 6 tbsp water)
1 tablespoon coriander powder
1 teaspoon red chili paste
4 tablespoons sugar
1 tablespoon dark soy sauce
1 1/2 tablespoons vinegar
1 teaspoon salt
1/2 teaspoon pepper
2 teaspoons oil

Steps:

  • Chop the shallots.
  • Throw all the marinade ingredients into a food processor and whiz till you get a nice smooth paste.
  • Taste the marinade. It should have a pronounced tamarind-y and sweet flavour. Don't worry about the saltiness yet.
  • Take the chicken wings and cut each wing into two at the joint.
  • In a large bowl, add the chicken wings and marinade and mix well with your hands.
  • Cover and leave it to marinate overnight in the refrigerator, even 24 hours if you can.
  • After the marinating time is over, you'll find that some of the marinade has pooled in your bowl.
  • Transfer the chicken wings to another bowl, gently shaking off any excess marinade.
  • Now you'll have marinated wings in one bowl and excess marinade in the other.
  • We're about to deep-fry the chicken wings and the excess marinade will form our dipping sauce.
  • The wings must be fried only when required so they stay hot.
  • To make the sauce, take a pan, heat it, and pour the extra marinade into it.
  • Add about 1/2 cup of water or chicken stock and cook over medium heat for about 15-20 minutes till you have a sweet and fruity-sour sauce the consistency of tomato ketchup.
  • At this point, taste the sauce for saltiness and flavour balance.
  • Adjust if required. Turn off the heat.
  • For the wings: In a frying pan, heat about 300 ml oil for deep-frying.
  • Fry as many wings on medium-high heat at one time as you can without crowding them too much.
  • This should take about 5 minutes or till it turns a nice brown (not golden brown; we want them darker than that.).
  • Remove the first batch to a platter and dry the extra oil off with paper towels.
  • Repeat this till you've fried the entire batch of wings. Resist the temptation to eat them after they're fried. Actually, go ahead, try one piece. ;).
  • Now you have deep-fried wings and a dipping sauce.
  • How you want to take it from here is up to you.
  • You can serve the wings with the sauce on the side, or you can pour the sauce on top of the wings with a spoon to coat them. The second option is messier to eat, but more fun.

3 tablespoons tamarind paste (see note), diluted in 3 tablespoons water
1/2 cup pomegranate paste (see note) diluted in 1/2 cup water, or 1 cup pomegranate juice

10 skinless chicken legs
Seeds from pomegranate, for garnish

Steps:

  • In a large Dutch oven or in a pot with a tight-fitting lid, mix the onions, 1 1/2 cups cilantro, the garlic and the spices. Blend in the diluted tamarind paste, the diluted pomegranate paste, the ketchup and the salt.
  • Add chicken thighs and legs to pot, and submerge in sauce. Cover, and cook on medium-high heat for 10 minutes, then lower heat, and cook for 1 hour. Uncover, adjust seasonings to taste, and continue cooking for 20 minutes.
  • Transfer chicken and sauce to a serving platter, and garnish with remaining cilantro. Sprinkle pomegranate seeds over platter, and serve hot.

3/4 cup spicy tomato sauce or 3/4 cup tomato chili sauce

Steps:

  • Heat oil in a deep pan or skillet (do not smoke).

1 tablespoon dark brown sugar
2 teaspoons unseasoned rice vinegar
2 teaspoons molasses
1/4 teaspoon garlic powder
3 garlic cloves, diced
3/4 cup water plus 2 tablespoons
1 tablespoon cornstarch
2 teaspoons sesame oil
8 boneless, skinless chicken thighs, cut into 1/2-inch-wide strips
Bamboo skewers
White toasted sesame seeds, for garnish
2 green onions, thinly sliced (everything but the bulb), for garnish

Steps:

  • In a small pot or saucepan, mix together the first 7 ingredients (tamarind paste to 3/4 cup water). Bring the mixture to a boil over medium heat, then reduce to low and cook for 10 minutes.
  • In a separate bowl, mix the cornstarch with the 2 tablespoons of water until it is dissolved and smooth. Add the cornstarch mixture to the pot and stir until it is well combined and the sauce begins to thicken like a glaze. Continue to cook and reduce by one third, 2 to 3 minutes. Then turn the heat to the lowest possible setting and cover the pot with a lid to keep the sauce warm.
  • In a large skillet, heat the sesame oil over medium-high heat. Add your chicken pieces and about a quarter of the sauce and cook for 5 minutes without stirring. Then toss the chicken pieces, doing your best to flip them over, adding another quarter of the sauce. Cook until the inside of the meat is white, 6 to 8 minutes more.
  • Remove the chicken from the heat and allow it to rest until the pieces are cool enough to handle. Weave the chicken onto the bamboo skewers, about 4 per skewer, and lay them flat on a serving dish or a large plate. Drizzle the remaining sauce over the skewers and sprinkle with white toasted sesame seeds and the sliced green onions. Serve and eat immediately.

2/3 cup tamarind paste
2 tablespoons chopped garlic
3/8 cup canola oil

1 tablespoon Mexican chili powder
1 teaspoon cayenne
1 tablespoon paprika
1 1/2 tablespoons salt
1/8 cup canola oil
1 1/2 lbs onions, thinly sliced
7 large garlic cloves, thinly sliced lengthwise
8 ounces tomatoes, 2 medium, chopped
1 large jalapeno, chopped
1/2 tablespoon ground cumin
2 tablespoons ground coriander
1 teaspoon crushed cayenne pepper
1 teaspoon turmeric
1 1/2 inches cinnamon sticks

5 tablespoons chickpea flour
6 cups water
1 cup low-fat coconut milk

Steps:

  • Combine marinade ingredients in a large bowl. Add chicken breasts and cover well with marinade. Cover and refrigerate 3 hours or do it in the morning and leave in fridge until dinnertime.
  • Curry: Heat oil on medium heat 1 minute. Add onions and saute till golden brown about 10 minutes. Edges of some onions will be slightly burnt and that's okay.
  • Stir in tomatoes, jalapeno, cumin, coriander, cayenne, tumeric, cinnamon stick and salt. Cook 5 to 8 minutes or until oil glistens through tomatoes. Reduce heat to low.
  • In a separate bowl, mix chick pea flour and 1 cup of water mixing thoroughly with whisk. Make sure there are no lumps.
  • Add this mixture and remaining water to curry. Stir well and increase heat to medium.
  • When curry boils, reduce to low and add coconut milk.
  • Stir curry regularly and simmer for 20-30 minutes. The curry will thicken as it boils. Cook until the curry is the consistency of a cream sauce.
  • Preheat BBQ or grilling pan to high heat. If in the kitchen, turn the exhaust fan on high and open the windows.
  • Grill each chicken breast 4-5 minutes each side. Test for doneness and cook another minute per side if necessary.

2 large mangoes, peeled, seeded and coarsely chopped
1/3 cup dark brown sugar
2 teaspoons Worcestershire sauce
1 tablespoon tamarind paste (not tamarind pulp)
1 tablespoon vegetable oil
1/2 teaspoon red pepper flakes
2 garlic cloves, coarsely chopped
2 pounds chicken wings (about 24), wingtips removed, or drumettes rinsed and patted dry
Kosher salt and freshly ground black pepper
Cooking spray
Chopped scallions, for garnish

Steps:

  • Place the mangoes, brown sugar, Worcestershire sauce, tamarind paste, oil, red pepper flakes, and garlic in a blender. Puree until smooth.
  • Place the chicken wings in a large bowl and season with salt and pepper. Add just enough sauce to coat the wings (about 1/2 cup, reserve the rest for serving) and toss to coat. Cover the wings with plastic wrap and refrigerate for at least 30 minutes or up to 1 hour.
  • Preheat the oven to 350 degrees F. Line a baking pan with aluminum foil and lightly coat with nonstick cooking spray.
  • Lift the chicken wings out of the sauce letting the excess marinade drip back into the bowl. Place the wings on the prepared baking pan and bake for 30 minutes until cooked through. Preheat the broiler and adjust the rack so it's 6 inches from the heating element. Transfer the wings to the broiler and broil for another 3 minutes until the skin is crispy.
  • While the wings bake, place the reserved sauce in a small saucepan and bring to a boil. Reduce the heat to medium-low and simmer until syrupy, 5 to 10 minutes. 1 (6-ounce) chicken breast, butterflied
Salt and pepper

Vegetable oil, for sauteing
1 ripe plantain, peeled and sliced
1 link chorizo, chopped
1 teaspoon chopped garlic
Tamarind Rum Glaze, recipe follows
Cilantro Rice, recipe follows
1/4 cup tamarind concentrate
1/4 tablespoon chopped ginger
1 tablespoon chopped garlic
3 tablespoons amber rum
1/4 cup fresh cilantro
1/4 cup olive oil
Pinch salt
1 cup cooked medium grain rice

Steps:

  • Preheat oven to 350 degrees F.
  • Season chicken with salt and pepper and set aside.
  • Heat oil in a medium skillet over medium-high heat. Add plantains and saute until fully cooked. Remove from heat and mash to combine with the chorizo and garlic. Season, to taste, with salt and pepper. Spread the plantain mixture over the chicken breast and fold it over. Place chicken in a small roasting pan or baking dish and brush with the glaze. Roast in oven for 15 to 20 minutes, or until fully cooked through. Serve with Cilantro Rice.
  • In a small saucepan, combine all ingredients and bring to a boil over medium-high heat. Pour glaze over chicken.
  • Make cilantro oil by combining cilantro, oil and salt in a blender. Blend until thoroughly combined.
  • Place rice in a small saucepan. Over medium-low heat, drizzle in the cilantro oil and gently stir to combine with cooked rice. Heat until rice is warmed through. Serve with chicken.

¾ cup plain yogurt, stirred
1 tablespoon tamarind paste
3 tablespoons finely chopped garlic
¼ cup canola oil
1½tablespoons salt
1¼ teaspoons ground cayenne pepper
1 tablespoon garam masala
2¼ pounds boneless chicken thighs
1 lemon, in 6 wedges

  • What you do In a large mixing bowl, combine yogurt, tamarind paste, garlic, oil, salt, cayenne and garam masala. Add chicken thighs and mix well. Make sure chicken is well covered in the marinade. Cover the bowl with plastic wrap and refrigerate for at least four hours and up to eight hours. The longer the chicken marinates, the stronger the flavours will be. Preheat a grill, barbecue or stovetop cast-iron grill to high heat. Remember to turn on your exhaust fan when you are grilling on your stovetop, since the cooking process will emit some smoke. Grill marinated chicken thighs on one side for about two minutes and then turn over. Grill the other side for two minutes and turn over again. Grill each side again for two minutes for a total of four minutes a side. Poke the thighs with a knife to be sure they are cooked through. If the meat is still pink, grill each side for one minute more. To serve, divide rice, noodles or salad greens among six plates. Top with grilled chicken. While piping hot, squeeze a little fresh lemon on the chicken, according to taste.

A classic Peranankan (Chinese with Malay heritage) recipe I got off Women's Weekly magazine to which I had made some adjustments. Yummy stuff esp if the taste of sweet brown sugar contrasted with the subtle tanginess of tamarind marinade appeals to you. You should be able to purchase tamarind pulp (assam) from asian supermarkets. Tried it and it's always a winner at family reunion dinners.

5 tablespoons tamarind paste
10 shallots, finely chopped
2 tablespoons dried coriander leaves
120 g brown sugar
1 1/2 tablespoons dark soy sauce
1 1/2 tablespoons vinegar
2 teaspoons salt
1 1/2 teaspoons pepper
1 kg chicken piece
2 tablespoons oil

Steps:

  • Mix tamarind sauce with shallots, coriander powder, sugar, soy sauce, vinegar, salt and pepper.
  • Marinate chicken pieces, cover and leave in the fridge overnight.
  • Put the marinated chicken to stove and bring the entire pot to boil. Simmer over low fire for about 30 min until chicken is tender and sauce has thickened.
  • The sauce should have carmelised alittle over the chicken.
  • Garnish with coriander leaves and serve with cucumber if desired.

1 tablespoon canola oil
1 tablespoon mustard seeds
8 -10 medium green chilies, de-seeded and diced
1 onion, finely diced
5 tomatoes, chopped or 1 (10 ounce) can diced tomatoes
1 1/2 teaspoons tamarind pulp
1 tablespoon coriander seed, dry-roasted and coarsely ground
2 skinless chicken breasts, chopped into pieces

Steps:

  • Heat the oil in a wide saucepan and, when hot, add the mustard seeds.
  • Once the seeds start popping, remove the pan from the heat.
  • When the popping stops, return to the heat, reduce the heat and stir in the chilis and onion.
  • Fry for 8-10 minutes until the onions are soft.
  • Add the tomatoes and 1 cup water (if using canned tomatoes, drain juice into measuring cup and add additional water to equal 1 cup) and stir.
  • Stir in the tamarind and coriander seeds and season.
  • Add the chicken, mix well and cook over a medium heat for 8 minutes until cooked through.

CHICKEN-STUFFED FIGS, ONIONS AND EGGPLANTS IN TAMARIND SAUCE



Chicken-Stuffed Figs, Onions And Eggplants In Tamarind Sauce image

12 medium onions, peeled
3 tablespoons olive oil
2 skinless, boneless chicken breasts
1/2 teaspoon ground cardamom
1/4 teaspoon ground cloves
1 teaspoon salt
1/2 teaspoon white pepper
3 teaspoons tamarind concentrate (see note)
2 dried or fresh figs, diced, plus 10 fresh whole figs for stuffing
3 tablespoons brown sugar
10 small Italian eggplants

Steps:

  • Dice 2 onions, and place them in a large skillet with 2 tablespoons olive oil. Sauté over medium-high heat for 5 minutes.
  • Using a meat grinder or a food processor fitted with a steel blade, grind or pulse chicken until finely diced. Add chicken, cardamom, cloves and salt and pepper to skillet, and continue cooking over low heat until chicken is lightly browned. Adjust seasonings, and remove from heat.
  • Mix tamarind concentrate with 4 cups hot water in a large saucepan, and bring to boil. Add 2 diced figs along with brown sugar. Reduce heat, cover, and simmer for 5 minutes.
  • Core remaining onions from bottoms up, leaving tops intact, removing all but a few inside layers. Stuff them 3/4 of the way full with chicken mixture. Close hole at bottom of onion with a small piece of onion from core. Place stuffed onions in pot with tamarind sauce. Cover pot, and bring to boil. Reduce heat, and simmer for 30 minutes.
  • Meanwhile, in a large skillet, brown eggplants on all sides in remaining tablespoon olive oil. Remove from heat, and allow to cool for 5 minutes. Make a slit in one side of each eggplant about 1 inch deep and 2 inches long. Carefully open, and scoop out seeds, making a pocket large enough to hold about 1/4 cup chicken mixture. Stuff eggplants, and add them to onions in pot. Cook covered for 30 minutes more.
  • Open whole figs from bottoms up, and remove seeds. Stuff with 1 tablespoon chicken filling. Add figs to pot with onions and eggplants, and simmer for 10 minutes. Serve one stuffed fig, one eggplant and one onion to each person, with sauce drizzled over all three.

1/2 cup tamarind paste
1/2 cup water
1 tablespoon soy sauce
1 tablespoon brown sugar
2 tablespoons olive oil
1 lb boneless skinless chicken breast, cut into bite-sized pieces
8 ounces mushrooms, sliced
1/2 medium onion, sliced
3 garlic cloves, minced
2 cups bean sprouts
1 habanero pepper, seeded & chopped
3 cups cooked brown rice

Steps:

  • In a small bowl, combine first four ingredients. Set aside.
  • Heat oil in a wok over high heat. Add the chicken and stir-fry for 5 minutes.
  • Add the mushrooms, onion, and garlic; stir-fry for an additional 2-3 minutes.
  • Add the sauce, and stir until it just begins to simmer. Remove from heat, then stir in bean sprouts and habanero pepper.
  • Serve over brown rice.

Tips:

  • For the best flavor, use fresh tamarind paste. If you can't find it, you can use store-bought tamarind paste, but be sure to check the label to make sure it doesn't contain any added sugar.
  • If you don't have a blender, you can mash the tamarind paste with a fork or spoon.
