1 1/2 cups milk (at room temperature)
1 egg (at room temperature)
sour cream, salsa, pico de gallo, diced avocado, diced tomatoes, diced onion, chopped cilantro

Steps:

  • With rack in center position, preheat oven to 400°F. Grease a 2.5-quart baking dish (mine was 10.5- by 7.5-inches) or spray with nonstick cooking spray.
  • Set a large skillet, sauté pan, pot, or Dutch oven over medium-high heat. Add the ground beef and cook until no longer pink, breaking apart and stirring as the meat cooks. • In a medium bowl, whisk together the masa harina, baking powder, and salt. Stir in the melted butter, milk, egg, and the remaining ½-cup of shredded cheese until all ingredients are just combined. The mixture will be extremely thick.
  • Dollop the masa mixture over the beef mixture in the baking dish and spread to the edges, covering completely. Bake, uncovered, for 25 to 35 minutes, or until the top is golden brown and tests done with a toothpick inserted in the center. Serve immediately, plain or topped with your favorite garnishes.

TAMALE PIE - MOM'S

Tamale Pie - Mom's image

Wonderful comfort food! One of my family's favorites. Great casserole to "make and take". You can make it as spicy as you want. My mother made this with ground beef, I sometimes make it with leftover cooked, diced chicken for a lower fat alternative. Reminds me of my mom when I make it! You can serve it with Pico, sour cream or cilantro. TIP: I use a dutch oven - that way I don't have to transfer it to a casserole dish - thus saving myself a dish to wash!

Time 1h5m

Yield 1 Casserole, 6-8 serving(s)

Number Of Ingredients 14

1 lb ground beef
1 cup onion, chopped
1 cup green pepper, chopped
1 (15 ounce) can tomato sauce
1 (8 ounce) package frozen corn
1 cup black olives, sliced
1 garlic clove, minced
2 tablespoons chili powder
1 tablespoon ground cumin
2 teaspoons salt (to taste)
6 ounces sharp cheddar cheese, grated
3/4 cup cornmeal
2 cups water
2 tablespoons butter

Steps:

  • Brown beef, onions, garlic, and green pepper - drain any fat. (You can substitute diced, cooked chicken at this point for the beef, just brown the onions, garlic and green pepper) Add tomato sauce and corn, cummin, olives and salt. Mix and simmer 20 minutes. Add cheese and stir til melted, cover and remove from heat.
  • For cornmeal topping:.
  • Mix meal and 1 t. salt into cold water. Cook until like mush. Stir in butter.
  • Pour meat mixture into a large baking dish and top with meal mixture.
  • Bake at 375 Degrees F for 20 minutes.

Tips:

  • Use masa harina for the tamale dough. Masa harina is a type of corn flour that is made from dried corn kernels that have been soaked in limewater. It is the traditional ingredient used to make tamales, and it gives them their characteristic texture and flavor.
  • Season the tamale dough well. The tamale dough should be seasoned with salt, pepper, and other spices to taste. This will help to enhance the flavor of the tamales.
  • Use a variety of fillings for your tamales. Tamales can be filled with a variety of ingredients, such as meat, vegetables, cheese, and beans. Be creative and experiment with different fillings to find your favorites.
  • Wrap the tamales tightly. The tamales should be wrapped tightly in corn husks or banana leaves. This will help to keep the tamales moist and prevent them from falling apart.
  • Steam the tamales until they are cooked through. The tamales should be steamed for at least 30 minutes, or until they are cooked through. You can check to see if the tamales are cooked by inserting a toothpick into the center. If the toothpick comes out clean, the tamales are done.

Conclusion:

Tamale pie is a delicious and easy-to-make dish that is perfect for any occasion. It is a great way to use up leftover tamales, or it can be made with fresh tamales. This hearty and flavorful dish is sure to be a hit with your family and friends.
