Tips:

  • Choose the Right Cornmeal: Use a finely ground cornmeal for a smoother texture and a coarse ground cornmeal for a more rustic texture.
  • Soak the Cornmeal: Soaking the cornmeal in water or broth before cooking helps to hydrate it and prevents it from becoming gritty.
  • Season the Cornmeal: Add salt, pepper, and other seasonings to the cornmeal mixture to enhance the flavor.
  • Use a Cast Iron Skillet: A cast iron skillet provides even heat distribution and helps to create a crispy crust on the tamale pie.
  • Layer the Ingredients: Layer the ingredients in the skillet in the following order: cornmeal mixture, filling, and cheese.
  • Bake Until Golden Brown: Bake the tamale pie in a preheated oven until the top is golden brown and the filling is bubbly.
