TAHINA
Please note that the recipe does not recognize the ingredient Tahina sauce, so I am putting it here. Please use 4 heaping tablespoons of tahina sauce in the recipe. This is the recipe I make at home using tahina sauce as the main base. It is a basic recipe and just the way everyone in my family likes it. I'm glad, though, that there are so many different tahina recipes out there, because then you can just prepare the kind you like. Or you can do a combination of recipes to see which ones suits your fancy. For this recipe, I use bottled lemon juice, but you can always use fresh lemon juice if you like.

Steps:
- In a food processor combine all ingredients, minus the 2 tablespoons of water. Pulse on slow for 1 minute. Stir with spoon to check consistency, as it shouldn't be thick.
- Add the 2 tablespoons of water, and pulse again for 30 seconds. It should be fine at this point.
- Split the tahina onto two plates. Put 1 tablespoon and 1 1/2 tablespoons of zaatar on each plate. Serve immediately with pita bread.
Tips:
- Choose the right tahini: Look for a smooth, creamy tahini made with 100% sesame seeds. Avoid tahini that contains additives or oils.
- Use fresh lemon juice: Fresh lemon juice adds a bright, citrusy flavor to tahini sauce. Avoid using bottled lemon juice, as it can be bitter.
- Add water or broth gradually: When thinning out tahini sauce, add water or broth gradually until you reach the desired consistency. Adding too much liquid can make the sauce too thin.
- Season to taste: Tahini sauce can be seasoned with a variety of spices, such as garlic, cumin, and paprika. Experiment until you find a flavor combination that you enjoy.
- Use tahini sauce as a dip, spread, or dressing: Tahini sauce is a versatile condiment that can be used in a variety of dishes. Try it as a dip for vegetables, a spread for sandwiches, or a dressing for salads.
Conclusion:
Tahini is a delicious and versatile ingredient that can be used to make a variety of sauces, dips, and spreads. With its creamy texture and nutty flavor, tahini is a great addition to any meal. Whether you're using it as a dip for vegetables, a spread for sandwiches, or a dressing for salads, tahini is sure to add a delicious and nutritious touch to your dish.
